This extreme rarity, combined with a resolutely artisanal philosophy and a refusal of all commercial communication, gives the estate an almost mythical aura among lovers of great white wines.

Le Clos La Néore is a one-hectare family monopole nestled in the heart of the Monts Damnés, the most emblematic hillside of Chavignol, facing due south. This ideal positioning encourages a slow and gradual ripening of the grapes. The Vatan family has cultivated this site for thirteen generations, a rare continuity that reflects the estate's deep attachment to this singular place.

Edmond Vatan, born in 1929, reigned for more than sixty years over the estate before illness forced him to slow down in 2007. His daughter Anne, a brilliant archaeologist trained at the École du Louvre, took over the winemaking in 2008. Edmond passed away in January 2022, leaving behind a legacy of cult wines that Anne continues to produce today on her own. This family transmission, marked by rigour and passion, is at the heart of the estate's identity.

The Edmond Vatan estate focuses on a single cuvée: the Sancerre Clos La Néore, a white wine made from 100% Sauvignon Blanc, of absolute rarity. This wine is distinguished by its vibrant minerality, its freshness and its aromatic depth. The Kimmeridgian marl and Jurassic limestone soils on which the vines are planted give it a saline and mineral touch that reveals itself and intensifies with ageing.

The philosophy of Domaine Edmond Vatan is based on minimal human intervention. Fermentation is carried out with indigenous yeasts in large neutral wood foudres of 600 litres, at least a century old, after which the wine is aged in these same vessels before being bottled without filtration or fining, in May, when the barometric pressure is deemed optimal. This instinctive and non-interventionist approach allows the terroir to express itself with complete sincerity.

The wines from Domaine Edmond Vatan are highly sought after by enthusiasts for their immense ageing potential. In the way they develop with age, they have more in common with the great Chablis from Domaine Raveneau or Dauvissat than with the majority of Sancerres. To enjoy them to their fullest, it is advisable to store them at a stable temperature between 10 and 13°C, away from light and vibrations, and to allow them several years of cellaring before opening.

History of Domaine Edmond Vatan

The history of Domaine Edmond Vatan is a family story woven over centuries, rooted in the deep foundations of the Sancerre vineyard. As early as the 16th century, property deeds mention vines and a cellar in Chavignol belonging to a branch of the family, originally from the neighbouring village of Bué. It was in the 18th century that the Vatans acquired the emblematic parcels of La Néore, within the Monts Damnés, consolidating their presence on this exceptional terroir.

At the beginning of the 20th century, Robert Vatan, founder of the modern estate, settled in Chavignol and trained under his uncle Louis Léon Maréchal, a master of traditional methods. He passed this legacy on to his son Edmond, born in 1929, who joined the estate in 1947. Tireless, Edmond reigned for more than 60 years over 5 hectares of vines, influenced by legendary figures such as Paul and Francis Cotat and Henri Jayer. A humble and visionary farmer, he replanted the Clos La Néore in 1970 through a massal selection, limiting yields to exalt quality.

In 2007, an illness forced Edmond to slow down; his daughter Anne, a brilliant archaeologist trained at the École du Louvre and holder of a doctorate, took over the winemaking in 2008. Passionate about history and terroir, she had already expressed her desire to return to the family vines as early as the 1990s. Accompanied by her husband Nady Foucault, an icon of Clos Rougeard, Anne perpetuates her father's legacy with absolute fidelity, transforming the estate into a world beacon of Sancerre. Edmond passed away in January 2022, leaving a legacy of cult wines. Today, Anne runs this jewel alone.

Terroirs and Vines of Domaine Edmond Vatan

Domaine Edmond Vatan draws its magic from an exceptional terroir: the Clos La Néore, a 1-hectare family monopole nestled at the heart of the Monts Damnés, the most emblematic hillside of Chavignol. This steep lieu-dit, oriented due south and mid-slope, benefits from ideal sun exposure, encouraging slow and deep ripening of the grapes. The soils, composed of Kimmeridgian marls and Jurassic limestones rich in fossilised shells, impart a saline and vibrant minerality to the wines, reminiscent of the great Chablis in their telluric backbone.

The Sauvignon Blanc vines, aged 40 to 50 years, are severely pruned for ultra-low yields, around 35 to 40 hectolitres per hectare, half the local average. Practising organic viticulture without synthetic inputs or official certification, Anne Vatan harvests late, after her neighbours, to pick fruit at optimal ripeness: juicy flesh, flavoursome skins and seeds. This approach, respectful of the natural cycle and inspired by ancestral methods, allows the century-old vines to fully absorb the calcareous substrate, producing grapes concentrated in chlorophyllic, fruity and spicy aromas. 

Winemaking at Domaine Edmond Vatan

Winemaking at Domaine Edmond Vatan is a minimalist art, faithful to a tradition unchanged for generations, where human intervention steps aside in favour of the terroir. Everything begins with a delicate pressing to preserve the integrity of the fruit. Spontaneous fermentation on indigenous yeasts takes place in enamelled vats or in old, neutral centenary oak barrels of 600 litres, without temperature control — Edmond guided himself by nose, sniffing the aromas to adjust natural aeration.

The ageing, extended until the end of the following spring, incorporates only two rackings to gently clarify the wine on fine lees, encouraging olfactory complexity and a silky texture. Neither fining nor filtration alters the purity; sulphur is used sparingly, limited to burning a candle in the empty barrels after bottling. Bottling, carried out in May under optimal barometric pressure, respects lunar and seasonal rhythms. Since 2018, the cuvées are released only in magnum, the ideal format for optimal ageing. This instinctive philosophy, inherited from Edmond and affirmed by Anne, produces wines of astonishing vitality, where mineral freshness dances with generous fruitiness.

Domaine Edmond Vatan focuses on a single iconic cuvée: the Sancerre Clos La Néore, a pure Sauvignon Blanc of absolute rarity, produced in magnum only since 2018. All benefit from phenomenal longevity — a 1996 still drinks with youthful insolence!
