Completing the range are 1 Nuits St Georges Village rouge as well as a very rare Nuits St Georges village blanc, delicate with aromas of white flowers, honey and brioche. Opulent, yet without flabbiness, this wine deserves the attention of enthusiasts, who may enjoy it over 4 to 7 years. At Domaine Chevillon, strict sorting of the grapes is favoured, along with eighteen months of ageing and the use of barely 30% new oak barrels, so as not to mask the identity of the crus. The wines of Domaine Robert Chevillon are renowned for their finesse and their significant ageing potential. The wines from the finest terroirs, such as the Premiers Crus de Nuits St Georges Les Pruliers, Les Saint Georges and les Vaucrains, very often feature in tastings among those of the best producers in the area. The pinnacle of production is undoubtedly the Nuits St Georges 1er Cru les St Georges de Robert Chevillon, with a deep colour and offering great aromatic complexity, with a purity of fruit evolving towards toasted and spice notes, mingled with subtle animal nuances such as fur and musk. On the palate, its rich and complex structure is powerful, yet always elegant. Like all great wines for ageing, one may choose to keep this near-fine wine for 10 to 20 years, but it is often approachable and harmonious from its youth. The Nuits St Georges 1er Cru les Vaucrains covers an area of 1.63 ha at Domaine Chevillon, and displays a fairly deep colour, with a powerful nose hinting at reserve. Marked by black fruits, blackberry and a fine wild energy, it evolves gracefully towards more vegetal and animal nuances such as oak bark and venison. The wine is very ample and structured on the palate, of great stature and displaying much vigour, with a certain firmness. For this cru, it seems prudent to keep it for at least 8 to 10 years before tasting, in order to fully appreciate its immense potential: a great, very complete and thoroughbred wine. Expressive and energetic, the Nuits St Georges 1er Cru Les Cailles de Robert Chevillon is athletic, deep and slender, built on crunchy, very ripe yet highly refined tannins. An excellent compromise between a wine to enjoy younger and a wine for ageing, as can also be said of the Nuits St Georges 1er Cru les Chaignots de Robert Chevillon, with its crunchy morello cherry fruitiness, nervous, dense and of very fine concentration.
