Domaine des Aurelles is located in the Hérault, in the small village of Nizas, near Pézenas, between Béziers and Montpellier. Since the estate was founded in 1995, and although they are not originally from the region, Caroline and Basile Saint-Germain have succeeded in producing some of the finest wines in the Languedoc. The estate's vineyard covers 9 hectares, of which nearly 8 are planted with red grape varieties: Grenache Noir (39%), Carignan (34%), Mourvèdre (19%) and Syrah (8%), with Roussanne being the only white variety in production.

Located just 30 km from the sea, the climate is Mediterranean, but tempered by the proximity of the Massif Central. The construction in 2001 of a modern, bioclimatic cellar (built in solid stone) allowed the estate to improve the quality of its winemaking. Today, the wines benefit from the thermal insulation of stone during their aging — 22 months for the white "Aurel", and 44 months for the 2 flagship cuvées: "Aurel" and "Solen". Vineyard work focuses on limiting yields while preserving biodiversity, with no weeding or pesticides. Thanks to these low yields and particular attention to detail, Basile Saint-Germain produces superb wines, sold 5 to 6 years after the vintage to offer more "civilised" wines: drinkable, with subtle fruit, polished tannins, and slowly decanted by time. The "Aurel" rouge is a blend of 85% Mourvèdre and 15% Grenache. The slightly wild character of the Mourvèdre gives momentum to this southern wine, with its iodine and garrigue accents, which should ideally be kept and served at the right temperature given its minimal sulphur content (lower than most biodynamic labels, which are already among the lowest). The "Solen", composed of 60% Carignan and 40% Grenache, is complex and long, finishing with beautiful fine-grained tannins. It does, however, require a little cellaring to be appreciated at its true value. The "Aurel" blanc is made from 100% Roussanne (rare for the region), with 2,000 to 3,500 bottles produced per year. It could be compared to certain wines from the northern Rhône Valley, so rich is its festival of flavours: brioche, toasted bread, hazelnut, a rare breadth on the palate, and a honeyed, rich and rounded finish. A true artisan wine. The sincerity, brilliance and personality of the production of the Domaine des Aurelles will win over lovers of great wines from the Languedoc. Highly recommended.
