Located just 30 km from the sea, the estate has a Mediterranean climate tempered by the proximity of the Massif Central. The construction of a modern, bioclimatic winery in solid stone in 2001 enabled the estate to improve the quality of its winemaking. Today, the wines benefit from the stone’s thermal stability during aging: 22 months for the white "Aurel" and 44 months for the two flagship cuvées, "Aurel and Solen. Vineyard work focuses on limiting yields while preserving biodiversity, without herbicides or pesticides. Thanks to these low yields and meticulous care, Basile Saint-Germain produces superb wines, released 5 to 6 years after the vintage to offer more "civilized" wines: approachable, with subtle fruit and polished tannins, slowly settled by time. "The red Aurel is a blend of 85% Mourvèdre and 15% Grenache. Mourvèdre’s slightly wild character gives energy to this southern wine, with its saline and garrigue notes. Given its minimal sulfur content (lower than the limits of most biodynamic certifications, which are already among the lowest), it should ideally be stored and served at the right temperature. "Solen", made from 60% Carignan and 40% Grenache, is complex and long, finishing with beautifully fine-grained tannins. It does, however, need some time in the cellar to be fully appreciated. The white "Aurel" is made from 100% Roussanne (rare for the region), with 2,000 to 3,500 bottles produced each year. It could be compared to certain wines from the northern Rhône Valley, such is its array of flavors: brioche, toast, and hazelnut, with unusual breadth on the palate and a honeyed, rich, rounded finish. A true artisan wine. The sincerity, vibrancy, and character of the wines from Domaine des Aurelles will appeal to lovers of fine Languedoc wines. Highly recommended.
