The History of Maison Moillard

The history of Maison Moillard stretches its roots well before the French Revolution, when the Moillard family was already conducting significant viticultural activity in Nuits-Saint-Georges, as attested by local archives. It was in 1850, under the impetus of Symphorien Moillard, that the house truly took off. That same year, his marriage to Marguerite Grivot, daughter of a vineyard-owning family, gave rise to the historic signature Moillard-Grivot, which would lastingly mark the wines of the house.

Very quickly, the house's development accelerated thanks to Symphorien's encounter with a Belgian notary, who was captivated by his wines and opened the doors of the Belgian export market. Over the generations, Maison Moillard extended its reach far beyond the French borders, becoming one of the essential references for Burgundy wines in the world. Today established at the heart of the Route des Grands Crus in Nuits-Saint-Georges, the house brings together a team of dedicated men and women, perpetuating ancestral expertise in winemaking and ageing. It maintains close ties with the three historic Hospices of the vineyard (Beaune, Nuits-Saint-Georges and Beaujeu), for which it ages a selection of cuvées from the famous auctions.

Terroirs and Vineyards of Maison Moillard

Maison Moillard owns an estate of 11.5 hectares, located at the heart of the Côte de Nuits. This vineyard produces wines from several AOPs, including Bourgogne Hautes Côtes de Nuits (white and red), Côte de Nuits Villages, Nuits-Saint-Georges (notably the climat Les Argillats) and Savigny-lès-Beaune. The estate holds the Haute Valeur Environnementale level 3 certification, the highest French environmental distinction, a testament to a concrete commitment to biodiversity and responsible viticulture.

In addition to its estate activity, the house carries on a négociant activity rooted in Burgundian tradition, which enables it to offer an exceptionally wide range of appellations, from Chablis in the north to Beaujolais in the south, via the Côte de Beaune, the Côte de Nuits and the Côte Chalonnaise. Partner vineyards are selected with rigour, from growers faithful to the house's quality standards. The soils are typically Burgundian, blending clay and limestone with marly-calcareous or gravelly nuances, on which Pinot Noir and Chardonnay reveal their quintessence. The vines are farmed using sustainable viticulture, with treatments limited to the strict minimum and controlled yields.

Winemaking at Maison Moillard

Maison Moillard's expertise in winemaking and ageing is unique in Burgundy. For red wines, the berries are rigorously sorted before being transported to the vats in small bins, without harsh crushing. Fermentation is followed by a post-fermentary maceration of several days, which gently extracts noble tannins and complex aromas. Winemaking takes place under the watchful eye of the in-house oenologists, in the historic vat rooms of Nuits-Saint-Georges.

For white wines, the grapes are delicately pressed and then settled. Fermentation takes place in temperature-controlled vats or in oak barrels depending on the appellation, followed by regular lees stirring which brings richness and aromatic complexity. Ageing in barrels in the magnificent vaulted 19th-century cellars lasts from 12 to 18 months depending on the cuvée. For the Crémants de Bourgogne, the base wines are blended and then undergo a second fermentation in the bottle, followed by ageing on lees for a minimum of 12 months, before disgorgement, dosage and corking, carried out entirely at the house's sites in Nuits-Saint-Georges.

The Cuvées of Maison Moillard

The Bourgogne Pinot Noir Cuvée Signature is the house's iconic entry-level wine. A generous and fruity Pinot Noir, marked by aromas of cherry and wild strawberry, with a supple palate and a fresh finish — an accessible Burgundy that is truly representative of the house style.

The Bourgogne Hautes Côtes de Nuits Rouge is produced from the estate's own vineyards. A fresh and taut Pinot Noir, marked by pure fruit and a fine mineral backbone, it offers an excellent quality-to-price ratio from a high-altitude appellation prized by enthusiasts.

The Bourgogne Hautes Côtes de Nuits Blanc is a lively and mineral Chardonnay, produced on the estate, with beautiful freshness, aromas of citrus and white flowers, and a persistent saline finish.

The Coteaux Bourguignons is a generous and approachable blended cuvée, true to the bistro spirit of Burgundy. A pleasurable wine with vibrant fruit, ideal with everyday cuisine.

The Petit Chablis is a lively, refreshing and mineral Chardonnay from the Chablis region. Notes of citrus, white flowers and flint, a taut saline finish — perfect as an aperitif or with oysters.

The Chablis Village is the classic expression of Chardonnay on Kimmeridgian limestone soils. A pure, taut wine, marked by a chalky minerality and aromas of citrus and white fruits.

The Chablis Grand Cru Bougros is one of the seven Grand Cru climats of the Chablis region. Produced at the house's dedicated Chablis site, it embodies the elegance of Chardonnay on prehistoric soils, with a sharp minerality and great ageing potential.

The Mercurey is a generous cuvée from the Côte Chalonnaise. A full-bodied Pinot Noir, endowed with lovely red fruits and a fine tannic structure, it pairs ideally with red meats and aged cheeses.

The Beaujolais Blanc is a Chardonnay from the northern part of Beaujolais. A fresh and fruity wine, with notes of citrus and white flowers, ideal as an aperitif or with grilled fish.

The Savigny-lès-Beaune is a village Pinot Noir from the estate. A fine, supple and fruity wine, marked by aromas of strawberry and violet, with a delicate tannic framework.

The Côte de Nuits Villages is a representative Pinot Noir cuvée of the appellation, endowed with a dense texture, aromas of dark fruits and gentle spices, and fine ageing potential.

The Nuits-Saint-Georges Les Argillats is the estate's most representative cuvée. On the nose, this Pinot Noir reveals aromas of ripe dark fruits, leather and spices. A full-bodied palate, thoroughbred tannins, a long finish: an iconic wine of the estate's appellation.

The Nuits-Saint-Georges Villages is an aesthete's cuvée that embodies the power and nobility of the great wines of the Côte de Nuits. A firm structure, a complex bouquet of dark fruits, wild and liquorice nuances, and thoroughbred tannins promising exceptional ageing potential.

The Vosne-Romanée is the village expression of the most prestigious red village in Burgundy. A Pinot Noir of great breed, endowed with aromas of black cherry, spices and undergrowth, with an elegant, fleshy and persistent palate.

The Gevrey-Chambertin is a powerful and complex Pinot Noir, from the premier red appellation of the Côte de Nuits. A deep colour, a structured palate, firm yet silky tannins, and an aromatic finish of dark fruits and spices.

The Clos de Vougeot Grand Cru is one of the greatest wines of Burgundy. Founded around 1110 by the Abbey of Cîteaux, this historic Grand Cru offers a deep red colour, a nose of blackcurrant, raspberry, spices, wax, leather and coffee, and a complex palate of incredible length, with tannins that admirably prolong the finish.

The Corton Grand Cru is the only red Grand Cru of the Côte de Beaune. A majestic, full-bodied Pinot Noir, marked by aromas of ripe dark fruits, truffle and spices, with a noble tannic framework and great ageing potential.

The Corton Les Maréchaudes Grand Cru is a single-vineyard expression from the eponymous climat. A deep, dense wine, endowed with a singular aromatic expression and virtually limitless ageing potential.

The Corton-Charlemagne Grand Cru is a majestic white from the Côte de Beaune, offering notes of ripe fruits and white flowers, a sunny dimension and a noble saline finish — ideal as a gastronomic aperitif or with refined dishes based on foie gras or cream-braised poultry.

The Bâtard-Montrachet Grand Cru is one of the white summits of Burgundy. A Chardonnay of rare opulence and complexity, endowed with a dense texture, enchanting aromas of hazelnut, honey, stone fruits and flint, built for long ageing.

The Hospices de Beaune Corton Grand Cru Charlotte Dumay cuvée originates from the famous Hospices de Beaune auction. Carefully aged in the cellars of Maison Moillard, it delivers a thoroughbred, deep Corton Grand Cru that is both powerful and velvety, in keeping with the great tradition of the historic Hospices cuvées.
