A family estate rooted in the heart of Ambonnay, where biodynamics and respect for the Grand Cru terroir shape champagnes of rare precision.
- Terroir: Chalky soils of the Montagne de Reims, within the Grand Cru appellation, where Chardonnay reveals vibrant minerality and taut elegance.
- Winemaking: Biodynamic methods and meticulous blending express the purity of the grape variety and the distinctive character of Ambonnay.
Tasting notes for Eric Rodez Ambonnay Grand Cru Blanc de Blancs
Appearance: Pale gold with green highlights, silky clarity and fine, persistent bubbles.
On the nose: White flowers and fresh citrus (lime, grapefruit), followed by white-fleshed fruit (crisp apple, Williams pear), then a saline, chalky note evoking the soils of Ambonnay.
On the palate: A velvety texture and lively acidity, supported by chalky minerality and elegant tension, lead to a long, saline finish of crystalline purity.
Serve between 8 and 10 °C in a champagne flute or white wine glass to preserve its freshness and complexity.

- Aging potential: Enjoy now or cellar for up to 5 years in a cool place (12–14 °C), away from light.
