The Clos du Vieux Château 2023, a monopole from François Carillon in Puligny-Montrachet, is born on clay-limestone soils. This Chardonnay, with notes of peach and lime, captivates with its silky and mineral balance. Long and lively, it pairs beautifully with refined dishes through to 2030.
A family estate rooted in the heart of Puligny-Montrachet, where Chardonnay expresses itself with rare elegance.
- Terroir : A 0.78-hectare clos with deep clay-limestone soils, nestled behind the village, where warm days and mild nights sculpt grapes of accomplished ripeness.
- Vinification : Early harvests to preserve freshness, barrel fermentation for a silky texture, and patient aging in service of Burgundian minerality.
- To the eye : A pale golden robe of crystalline clarity, where light dances on green and silver highlights.
- On the nose : First notes of lime zest and acacia blossom, then more enveloping aromas of white peach and warm apple tart, lifted by a saline and chalky touch.
- On the palate : A lively and precise attack, carried by a taut acidity that stretches into a silky texture, blending ripe yellow fruits and calcareous minerality, for a long and saline finish.
Serve between 12 and 14°C in a Burgundy glass to release its full complexity.
