This Champagne Extra Brut Les Parcelles XXII from Pierre Paillard (80% Pinot Noir, 20% Chardonnay) expresses the chalky terroir of Bouzy. Aromas of crunchy apple, lemon and toasted bread, lively and mineral palate. Ideal with oysters or fish, to enjoy within 3 to 5 years.
Eight generations of family expertise rooted in the Grand Cru of Bouzy, where Pinot Noir reigns supreme on chalky hillsides.
- Terroir: Limestone soils and ideal exposure of Bouzy, the cradle of the most structured and mineral Champagne wines.
- Winemaking: Gentle pressing, partial barrel fermentation for some of the wines, and extra-brut dosage to preserve the purity of the fruit.
Tasting notes for Pierre Paillard Bouzy Grand Cru Extra Brut Les Parcelles XXII
To the eye – A golden robe with green highlights, of crystalline clarity and fine persistent effervescence, like liquid silk.
On the nose – Aromas of crunchy red apple, lime zest, then a touch of toasted brioche and a saline hint recalling the chalky subsoils of Bouzy.
On the palate – A lively and precise attack, carried by a taut acidity and chalky minerality, before a long and saline finish where white fruits and toasted bread notes intertwine.
Serve between 8 and 10°C in a narrow Champagne flute to concentrate the aromas.

A vintage marked by early ripeness and preserved freshness, offering wines of remarkable tension and great aromatic precision.
