A family house rooted in Bouzy, Pierre Paillard has cultivated a Grand Cru vineyard at the heart of the Montagne de Reims for eight generations.
- Terroir: Clay-limestone soils and chalky subsoil of Bouzy, fully south-facing – a setting for grapes of mineral precision.
- Winemaking: Extended aging on lees in century-old cellars, minimal dosage to reveal the purity of the fruit and the tension of the terroir.
Tasting notes for Pierre Paillard Bouzy Grand Cru Extra Brut La Grande Récolte 2008
To the eye: A golden robe with copper highlights, crossed by a stream of fine and persistent bubbles, heralding a silky texture and generous body.
On the nose: Aromas of crunchy red apple, Morello cherry, then toasted brioche and fresh almond, lifted by a saline touch and a chalky minerality characteristic of the Bouzy terroir.
On the palate: A lively and precise attack, carried by a taut acidity that blossoms into a creamy and velvety texture, while notes of soft spices and flint extend a long and saline finish.
