Here, 8 generations of Paillard have shaped this estate, demonstrating genuine expertise that brings to light the exceptional terroirs of Bouzy. Accompanied by his 2 sons, Antoine and Quentin, Benoit Paillard owns an 11-hectare vineyard planted 60% with Pinot Noir and 40% with Chardonnay, consisting of 30 plots classified Grand Cru with an average age of 30 years. Benoit Paillard has given a highly qualitative direction to this already renowned estate, and the philosophy applied here is as follows: respect for the soils, yield management, plot-by-plot winemaking, and long ageing times. Significant work is carried out in the vineyard, where chemical pesticides and herbicides are banned. The soils are meticulously tended and the addition of organic amendments (homemade compost) helps develop microbial life, root growth, and the assimilation of nutrients already present in the soil. The approach in the cellar is minimally interventionist, in order to express as naturally as possible the personality of the Pinot Noirs and Chardonnays grown on the clay-limestone soils of the Bouzy terroir. Malolactic fermentation is never blocked and sulphur doses are kept to a minimum. The wines are vinified plot by plot and aged for 9 months on lees in vat and barrel, then in the cellar, where they will age for up to 10 years on lees for the finest vintages. The La Grande Récolte 2008 cuvée from the Pierre Paillard estate showcases the heritage of old vines that the Pierre Paillard estate possesses. Pinot Noir and Chardonnay are judiciously blended to give birth to a great Champagne imbued with emotion, finesse, and complexity, combining vitality and vinosity. The Motelettes and Maillerettes cuvées seek to deliver a refined identity of the Bouzy terroirs. Les Mottelettes is a blanc de blancs Champagne from old Chardonnay vines planted in 1961 on the Grand Cru of Bouzy. This cuvée is quite rare, as there is very little Chardonnay planted on this Grand Cru. This superb Champagne is distinguished by its purity, elegance, and mineral grace with delicate almond flavours. The Les Maillerettes cuvée is a 100% Pinot Noir blanc de noirs from a single plot, situated at the heart of the Grand Cru vineyard of Bouzy. For this outstanding cuvée, Pinot Noir is carefully nurtured to express the full sensitivity of the great Bouzy terroir, with a superb result: fine bubbles caress the palate, accompanied by subtle and complex spiced flavours of great persistence. Les Terres Roses, a rosé Champagne dominated by Chardonnay (70%), is beautifully marked by Pinot Noir flavours and unfolds with finesse on a firm and fresh structure.
