History of Champagne Doussot-Bourdot

Founded on a family tradition of winegrowing, Domaine Doussot-Bourdot took a decisive turn in 2021 under the impetus of Billy Doussot. Based in Loches-sur-Ource, this young winemaker chose to break with grape selling in order to create his own Champagnes, marking a new era for the estate. His philosophy? To produce wines that speak of place, far from standardised norms. Drawing on the estate's 8.5 hectares, planted primarily with Pinot Noir and Chardonnay, Billy crafts single-plot cuvées that embody the soul of the Côte des Bar, a stone's throw from Burgundy.

Terroirs and Vines of Champagne Doussot-Bourdot

Located in the Aube, Domaine Doussot-Bourdot benefits from a unique limestone terroir, where brown soils and the varied exposure of the plots give the wines a distinct identity. The vines, cultivated in Loches-sur-Ource and Essoyes, are tended with a reasoned approach, free from herbicides and insecticides. Billy favours light tillage and controlled ground cover to preserve biodiversity and allow the grape varieties — 7.5 hectares of Pinot Noir and 1 hectare of Chardonnay — to fully express their potential. This respectful viticulture ensures ripe, healthy grapes, the essential foundation for Champagnes of character.

Winemaking at Champagne Doussot-Bourdot

Winemaking at Domaine Doussot-Bourdot is an ode to purity. Each cuvée is crafted from specific plots, vinified and aged for 10 months in 228-litre oak barrels, without yeast additions, fining or filtration. This minimalist approach preserves the integrity of the fruit and the complexity of the terroir. After careful disgorgement, the bottles rest for more than a year in the cellar, developing a rich and balanced texture.
