Domain History

Established in 1946, Chavost Estate bears witness to the determination of the forefathers, genuine winemakers from Chavot-Courcourt. Chavost, a name revealing the ancestral history of the village between Saint-Martin Church and the Mont-Félix hill, where a Castle once stood. The values passed down by the forefathers, steeped in love for the land, sharing, and solidarity, form the foundation of the estate's identity. Today, inheriting this rich tradition, the estate combines efforts to cultivate exceptional grapes, a cornerstone in crafting unique Champagnes.

Terroirs and Vines

The vineyard spans 5 hectares, holding organic certification since the 2023 harvest, adhering to the strict standards of Organic Agriculture. These lands carry the history of generations of winemakers, and the estate is committed to preserving them with care. The plots, inherited from the past, contribute to the diversity and quality of the grapes, imparting a unique personality to the Champagnes.

Viticulture and Vinification

Fabian, a passionate artisan, is the mastermind behind the elaboration of Wines and the marketing of Chavost Champagnes. With 10 years of winemaking experience worldwide, his return to the estate was marked by the desire to vinify differently. His approach aims to create atypical Champagnes with minimal, sometimes zero, additives. The commitment to environmental preservation, terroir, and Wine excellence strengthens convincingly.

Cuvees of the Estate

In harmony with the philosophy and faithful to the values, the estate has developed a new range, the "Et sans sulfites ajoutés!" range. This collection of unique and identity-rich Wines is based on meticulous vinification without the addition of sulfites. It enriches the existing traditional range, offering a diversity of flavors characterized by the authenticity and originality specific to Chavost Estate.

Chavost Blanc de Chardonnay Brut Nature: a lovely Blanc de Blancs cuvée, 100% Chardonnay: indigenous yeasts, spontaneous malolactic fermentation, 0 fining, and 0 acidity manipulation! A creamy nose sprinkled with yeast and hawthorn flowers evolving towards toasted bread and yellow fruit notes; a round and fresh attack gliding towards freshness for a beautiful smooth finish.

Chavost Blanc de Meunier Brut Nature: this 100% Meunier cuvée without added sugar has a delicately fruity nose sprinkled with small cooked red fruits, apple, and pear with notes of white flowers; the palate is vinous with great amplitude, and the aromas of the nose are found in the finish.

Chavost Blanc d'Assemblage Brut Nature: this cuvée is made from 50% Chardonnay and 50% Meunier grown on Clayey Limestone soils. A pleasant and powerful nose with beautiful notes of apple, tarte tatin, and almond, all slightly evolved, reminiscent of the bakery; a vinous and opulent palate, a beautiful structure, and incredible suppleness give it superb balance!

Chavost Rosé de Saignée Brut Nature: ⅔ Pinot Noir and ⅓ Meunier, 100% Saignée to experience the pleasure of powerful aromas of typical red fruits from both Pinots: blackcurrant, cherry, and candied raspberry. Like drinking a well-structured red wine, with a beautiful, very fruity length.
