Jean Marc Boillot worked at the family estate in Volnay until 1984, and produced his 1st vintage in 1985 while simultaneously working at Olivier Leflaive until 1988. It was with the addition of vines in Volnay in 1988 (on his grandfather's side), then vines in Puligny Montrachet in 1991 (from the Etienne Sauzet estate), that this small Domaine Jean Marc Boillot took flight and reached its current size of 11 hectares, located entirely on the Côte de Beaune. The vines are all planted at a minimum density of 12,000 vines/ha in order to induce competition between the stocks and thus compel the vine to root more deeply in each terroir. Today assisted by his children, Domaine Jean Marc Boillot also develops a small négociant activity.

The estate is renowned for its white wines which display an intense, rich and deep aromatic profile. During vinification, the white wines are aged with a proportion of 25 to 30% new oak and stirred once a week. The range consists of wines that are most often accessible when young, but which age elegantly after a few years: Bâtard Montrachet, Puligny Montrachet (1st crus Champs Canet, Les Combettes, La Garenne, La Truffière), Chassagne Montrachet, Meursault and Beaune (1st cru Montrevenots). The 2012 and 2014 whites deliver finesse of expression, length and complexity, and the Puligny Montrachet 1st cru Les Combettes 2012 has superb fruitiness, accompanied by a finale vibrant with energy. Regarding the red wines, the grapes benefit from total destemming and aging in barrels for 16 months with a proportion of 50% new oak. The Volnay, Pommard (1st cru Jarollières and 1st cru Rugiens), or Beaune 1st cru Montrevenots are solid wines for aging, which will demonstrate fine aging potential of more than 10 years. They will then better express the true depth of their respective terroirs. The best vintages recommended for cellaring in red are 2005, 2009, 2010, 2012, 2015.
