Frequently Asked Questions

Emmanuel Rouget is a Burgundian winegrower based in Flagey-Échezeaux, in the Côte de Nuits. He is the nephew of Henri Jayer, a legendary figure in Burgundian viticulture, and began working alongside him as early as 1976 to learn how to respect the terroir and bring out the best in Pinot Noir. In 1985, Henri Jayer took him under his wing as a protégé and began leasing part of his vineyards to him. Today, Domaine Emmanuel Rouget is recognised as the direct heir to his uncle's winemaking style and philosophy, perpetuating an exceptional expertise passed down from generation to generation.

The Cros Parantoux is a 0.71-hectare vineyard located in Vosne-Romanée, once a wasteland transformed by Henri Jayer using dynamite to break through the rock and plant vines in the 1950s. Classified as a Premier Cru, it is often regarded by connoisseurs as a Grand Cru, such is the remarkable complexity, minerality and depth it displays. The annual production of Domaine Emmanuel Rouget from this mythical plot does not exceed 3,000 to 3,500 bottles, making it one of the most sought-after and rarest cuvées in all of Burgundy.

The farming practices at Domaine Emmanuel Rouget are focused on respect for nature: the vines are cultivated without pesticides or herbicides, using organic treatments, and horse ploughing has been practised for several years on the Cros Parantoux. Yields are deliberately kept low to ensure optimal concentration of the grapes. This rigorous and committed viticulture, inherited directly from Henri Jayer, gives the domaine's wines a singular identity and an expression of terroir of remarkable fidelity, vintage after vintage.

The Domaine Emmanuel Rouget spans 8.5 hectares in the prestigious Côte de Nuits, with vines located primarily in Vosne-Romanée, Flagey-Échezeaux, Nuits-Saint-Georges and Savigny-lès-Beaune. Among the flagship cuvées, one finds the Vosne-Romanée Premier Cru Cros Parantoux, the Échezeaux Grand Cru, the Vosne-Romanée Premier Cru Les Beaumonts, as well as more accessible appellations such as the Bourgogne Passetoutgrain, the Bourgogne Aligoté and a Hautes-Côtes de Beaune.

The estate practices 100% destemmed harvesting, in the pure tradition inherited from Henri Jayer. Fermentations are slow and preceded by a cold pre-fermentation maceration, a technique developed by Jayer himself. For about fifteen years, the ageing has been longer, carried out on lees and without racking. The wines are fermented in concrete tanks before being aged in barrels for often more than 20 months prior to bottling. This minimalist approach aims above all to reveal the pure expression of the terroir, without artifice.

The wines of Domaine Emmanuel Rouget are great-ageing Pinot Noirs, crafted to evolve harmoniously over the long term. It is recommended to store them at a stable temperature between 12 and 15°C, away from light and humidity, in a suitable cellar or wine storage room. Before serving, decanting for one to two hours will allow the aromas to fully open up. These wines pair perfectly with grilled red meats, aged cheeses, or mushroom-based dishes, whose aromatic depth they beautifully enhance.

History of Domaine Emmanuel Rouget

The history of Domaine Emmanuel Rouget is intimately linked to that of Henri Jayer, one of the most influential winemakers of the 20th century in Burgundy. Founded in 1985 in Flagey-Échezeaux, this estate was born from the transmission of exceptional expertise between an uncle, Henri Jayer, and his nephew, Emmanuel Rouget. From 1976, Emmanuel, then a tractor engineer, joined his uncle in the vineyards of Vosne-Romanée. Under the tutelage of this master of Pinot Noir, he acquired unparalleled expertise, learning to respect the terroir and to bring out the best in the grape.

Henri Jayer, a legendary figure, revolutionised Burgundian viticulture with innovative methods, such as cold pre-fermentation maceration, and an obsessive pursuit of quality. When he retired in 1996, he gradually entrusted his vines to Emmanuel, including the iconic Cros Parantoux, a Premier Cru regarded as a Grand Cru by connoisseurs. In 2001, Emmanuel took full management of the estate, perpetuating his uncle's philosophy while adding his own personal touch. Today, his sons Nicolas and Guillaume carry on this family legacy, with Nicolas in the vineyard and Guillaume in the cellar, ensuring the longevity of this unique style.

Terroirs and Vines of Domaine Emmanuel Rouget

The Domaine Emmanuel Rouget covers 8.5 hectares in the prestigious Côte de Nuits, a region renowned for its calcareous, clay and stony soils, ideal for Pinot Noir. The estate's vines, located primarily in Vosne-Romanée, Flagey-Échezeaux, Nuits-Saint-Georges and Savigny-lès-Beaune, benefit from an east and south-east exposure, promoting optimal ripeness of the grapes while preserving their freshness.

The jewel of the estate is undoubtedly the Vosne-Romanée Premier Cru Cros Parantoux, a mythical terroir created by Henri Jayer. Once a wasteland, this 0.71-hectare vineyard was transformed by Jayer using dynamite to break up the rock and plant vines in the 1950s. Today, this cru, shared with Domaine Méo-Camuzet, is celebrated for its wines of exceptional minerality and complexity. The estate also farms other prestigious plots, such as Échezeaux Grand Cru (1.06 ha), Vosne-Romanée Premier Cru Les Beaumonts (0.29 ha) and village appellations such as Nuits-Saint-Georges and Savigny-lès-Beaune.

The viticultural practices, inherited from Henri Jayer, are focused on respect for nature. The vines are tended without pesticides or herbicides, using organic treatments and, for the past five years, horse ploughing on the Cros Parantoux. Yields are deliberately kept low to guarantee optimal concentration of the grapes, a crucial step in producing exceptional Burgundy wines.

Vinification at Domaine Emmanuel Rouget

The winemaking philosophy of Domaine Emmanuel Rouget rests on a simple principle: allowing the terroir to express itself. Faithful to Henri Jayer's techniques, Emmanuel favours minimal intervention in the cellar to preserve the purity of the fruit and the typicity of each plot. The grapes, rigorously sorted both in the vineyard and in the cellar, are entirely destemmed, a signature practice that avoids astringency and highlights the fruity aromas of the Pinot Noir.

Cold pre-fermentation maceration, an innovation by Henri Jayer, is at the heart of the process. This technique, which consists of macerating the grapes at low temperature before fermentation, extracts vivid colours, intense aromas and pure flavours, while limiting aggressive tannins. Fermentations, carried out in concrete vats, preserve the freshness and authenticity of the juices, followed by malolactic fermentation. The ageing, lasting 20 to 22 months, takes place in carefully selected oak barrels (François Frères and Taransaud), with a proportion of new wood adapted to each cuvée: 100% for the Grands Crus and Premiers Crus, 50% for the Villages, and one-year-old barrels for the Bourgognes.

The wines are neither fined nor filtered (except lightly for the whites), a decision that guarantees an authentic expression of the terroir. A minimal touch of sulphites is used during harvest and bottling, in keeping with the standards of natural wines. This meticulous process yields silky, elegant and energetic cuvées.
