History of Domaine Les Horées

Domaine Les Horées is the culmination of the rich and atypical journey of Catharina Sadde, a winemaker of German origin. Before launching into the world of wine, Catharina first evolved in the world of haute cuisine, working in Michelin-starred restaurants in Germany. However, a true passion for wine prompted her to change direction. She then trained in viticulture and oenology at the University of Geisenheim and SupAgro Montpellier, two internationally renowned institutions.

Armed with this solid training, Catharina enriched her skills in several prestigious estates in Burgundy, such as Domaine de la Romanée-Conti, Domaine Comte Georges de Vogüé, Domaine Cécile Tremblay and Domaine Marquis d'Angerville. It was through these experiences that her minimal interventionist winemaking style was forged, advocating the natural expression of the grape and terroir.

In 2018, with her husband Guilhem, she received a first parcel in Beaune. This gift marked the beginning of a wine adventure full of promise. From then on, the estate gradually expanded with new acquisitions in Pommard and Volnay. Their first vintage in 2019 quickly met with resounding success, propelling them onto the international wine scene.

Terroirs and Vineyards of Domaine Les Horées

Domaine Les Horées extends over 1.56 hectares of carefully cultivated vines across three prestigious appellations: Beaune, Pommard and Volnay. These parcels, with soils rich in limestone and clay, offer ideal conditions for the region's emblematic grape varieties, notably Pinot Noir, Chardonnay and Aligoté.

The Burgundian terroir is at the heart of the identity of the estate's wines. The parcels benefit from ideal exposure and varied soils composed primarily of limestone and clay, bringing a diversity of nuances to the wines produced. Each parcel is worked with extreme care, in accordance with the principles of biodynamics. The estate is certified biodynamic, a choice that reflects the Saddes' commitment to environmental preservation and the health of their vines.

Respect for the terroir is at the heart of the estate's philosophy. Biodynamic practices enable the production of grapes of exceptional quality, while promoting the preservation of the local ecosystem. The estate is distinguished by its use of a horse to plow the soils, ensuring better aeration and minimal intervention on the soil structure. This sustainable approach ensures an authentic and vibrant expression of the Burgundian terroir.

Winemaking at Domaine Les Horées

Winemaking at Domaine Les Horées is just as respectful of the fruit and terroir as the cultivation of the vines. Catharina Sadde adopts a "minimal interventionist" approach, which aims to allow the natural characteristics of the grapes and terroir to express themselves fully without unnecessary interference. Vinifications are conducted with indigenous yeasts, naturally present on the grapes, in order to preserve the unique aromas and flavors of the vineyard.

The use of sulfur is strictly limited. No dosage is added during fermentation or aging, only a very slight amount at bottling, in order to guarantee the stability of the wine while respecting its natural qualities. The wines are then aged in carefully selected oak barrels, bringing subtle woody notes while allowing the aromas and flavors of the terroir to express themselves fully.

Domaine Les Horées produces several cuvées, each reflecting the unique expression of its terroir and vintage.
