The wines of Savigny-lès-Beaune come from Burgundy, in the Côte de Beaune, in a valley carved by the Rhoin between the Corton mountain and the Beaune hillside. This village appellation produces a large majority of pinot noir reds, complemented by a small share of chardonnay whites, and includes twenty-two climats classified as premier cru. The character of this vineyard lies in its dual exposure: the south-facing slopes yield fragrant, elegant reds with notes of raspberry, cherry and violet, while the opposite hillsides produce firmer wines capable of ageing. Deep cherry colour, fine tannins, balance between fruit and freshness: such is the identity of this appellation.

Where is the Savigny-lès-Beaune appellation located?

The Savigny-lès-Beaune appellation is located in Burgundy, in the Côte-d'Or département, in the northern part of the Côte de Beaune, just a few kilometres from the town of Beaune. It covers the territory of the single commune of Savigny-lès-Beaune, where the Côte opens up on either side of a small river, the Rhoin, which has carved out an east-west valley. The vineyard covers approximately 354 hectares with an annual production of around 14,000 hectolitres, of which more than 85% is red. The vines extend from the lower parts of the slopes to the central alluvial fan, with the RN74 road marking the eastern boundary of the vineyard. The appellation is bordered by Pernand-Vergelesses and Aloxe-Corton to the north, with the Corton hill and its grand crus, by Beaune to the south and by Chorey-lès-Beaune to the east.

History of the Savigny-lès-Beaune Appellation

The history of the Savigny-lès-Beaune appellation is part of the very ancient story of the Côte d'Or vineyard, described as far back as the early 4th century. Its true development came during the Middle Ages: nearby abbeys, the ducal estate and the Knights of Malta shaped the vineyard, and the imposing 14th-century château attests to the importance of the site. The wine from this village was highly regarded at the time, to the point of being widely consumed at the Vatican. In 1395, Philippe le Hardi banned gamay in favour of pinot noir on his lands, a founding decision for the quality of Burgundy's reds, and in 1416 Charles VI fixed the production boundaries for Burgundy wine.

The 19th century brought its share of trials, from the pyrale moth to powdery mildew, then downy mildew and phylloxera at the end of the century. The village nonetheless played a pioneering role in the modernisation of viticulture: certain growers here were among the first to plant in regular rows and to adopt the pruning method that bears the name of Jules Guyot. Recognition as an appellation d'origine contrôlée came with the decree of 31 July 1937, as part of the broader creation of Burgundy's AOCs, and a 1970 decree subsequently revised the boundaries of the appellation and its premier crus. Since then, the valorisation of the climats and the shift to organic and biodynamic farming have profoundly renewed the image of this vineyard.

What are the terroirs of the Savigny-lès-Beaune appellation?

The terroirs of the Savigny-lès-Beaune appellation are spread across two opposing slopes, separated by the Rhoin valley, which is what makes it so distinctive within the Côte de Beaune. The northern slope, an extension of the Pernand-Vergelesses hillside, benefits from a south to south-east exposure and lighter, gravelly and stony soils: it yields fine, fragrant wines with a silky texture. The southern slope, backed against the Beaune hillside, faces north-east and rests on heavier, more clay-rich soils often tinged with iron oxide: it produces more structured, more tannic wines that require time. At the foot of the slope, the subsoil consists of Callovian limestone, topped by Oxfordian marls and limestone at higher elevations, while the central alluvial fan mixes alluvium and gravel.

Twenty-two climats are classified as premier cru, all located on the best-exposed mid-slopes, though the appellation has no grand crus. On the Pernand side stand out Les Vergelesses, Basses Vergelesses, Les Lavières, Aux Gravains, Aux Serpentières, Aux Clous, Aux Guettes, Aux Fourneaux, Les Talmettes and Champ Chevrey. On the Beaune side are Les Marconnets, Les Jarrons, Les Hauts Jarrons, Les Narbantons, Les Peuillets, Les Rouvrettes and above all La Dominode, often considered the pinnacle of the village. The climate, temperate with a continental tendency, brings cool nights that are conducive to aromatic finesse.

Which grape varieties are permitted in the Savigny-lès-Beaune appellation?

Two grape varieties structure the Savigny-lès-Beaune appellation, in keeping with the classic rule of the Côte d'Or. Pinot noir, known locally as pinot noirien, makes up the red wines: a delicate variety, demanding in terms of bud removal and susceptible to disease, it ripens early and produces colourful, moderately tannic wines with aromas of raspberry, cherry, blackcurrant and violet. Chardonnay, once called aubaine in the region, is responsible for the white wines: it combines fine ripeness with preserved acidity, resulting in ample, rich and balanced wines. The specifications permit, as elsewhere in Burgundy, a small proportion of chardonnay, pinot blanc and pinot gris — the latter known here as pinot beurot — in the red cuvées, a practice that has become very rare. Permitted yields range from approximately 40 to 58 hectolitres per hectare for reds and 45 to 64 for whites, depending on the appellation level.

What are the different styles of wine in Savigny-lès-Beaune?

The wines of Savigny-lès-Beaune come in two colours and two well-defined styles. The reds, which make up the large majority, display a deep cherry colour and a nose of small red and black fruits lifted by floral notes. Harvested by hand by the finest producers, they are destemmed or vinified as whole clusters depending on the producer's approach, gently extracted through pigeage and pumping over, then aged for twelve to eighteen months in barrel, generally with little new oak. The cuvées from the southern slope, more full-bodied, require patience; those from the northern slope win over drinkers more quickly with their fruit. The whites, rarer, display a golden colour with emerald highlights and a floral nose mingled with lemon, grapefruit and brioche, with a lively yet rich palate from lees ageing.

As for food and wine pairings, the reds accompany roast poultry, pan-fried foie gras, a fine cut of beef, mushrooms and characterful cheeses such as époisses, chaource or a well-aged tomme. The most structured premier cru cuvées pair well with game birds and slow-cooked dishes. The whites suit river fish in sauce, scrambled eggs, Burgundy snails, comté and goat's cheese.

What are the finest vintages of Savigny-lès-Beaune?

The finest vintages of Savigny-lès-Beaune over the past thirty years follow the rhythm of the Côte de Beaune. Among the great years are 1999, 2002 and 2005, followed by the remarkable duo of 2009 and 2010, the former generous and sun-drenched, the latter of classical precision. 2015 produced dense and ripe reds, 2016 wines of great finesse despite the frost that cut volumes, and 2017 balanced and accessible bottles. 2018, 2019 and 2020, all very sunny, yielded concentrated reds that the freshness of the combe saved from heaviness, while 2022 combines volume and balance and 2023 marks a return to generous fruitiness.

Conversely, 2004, 2011, 2012 and 2013 require careful selection, 2021 suffered a severe spring frost followed by a cool summer, yielding light and tart wines produced in very small quantities, and 2024 will be remembered as a difficult vintage marked by heavy downy mildew pressure. Today, the village wines from 2019 to 2022 make for pleasurable drinking, the premier crus from 2014 to 2018 are reaching maturity, while 2019, 2020 and 2022 still merit several more years in the cellar.

Which are the finest estates in the Savigny-lès-Beaune appellation?

The finest estates in the Savigny-lès-Beaune appellation rank among the most sought-after producers on the Côte de Beaune, often for prices that bear no relation to the quality of the wines. Domaine Chandon de Briailles, owned by the same family since 1834 and today run by Claude and François de Nicolay, stands as an absolute reference: fourteen hectares farmed in certified biodynamics, ploughing by horse, whole-cluster vinifications in truncated conical oak vats, very little new oak and minimal — sometimes zero — sulphur additions. Its premier crus Les Lavières and Aux Fourneaux, alongside the Île des Vergelesses and its Corton wines, are among the most prized bottles on the Côte. Domaine Simon Bize et Fils, another guardian of tradition and a long-standing champion of the village, produces with Aux Vergelesses, Aux Guettes and Les Marconnets some of the most precisely defined reds in the appellation, as well as excellent whites.

The appellation also attracts owners from other villages, which speaks volumes about the quality of its climats. Domaine Bruno Clair, based in Marsannay, owns a historic plot of La Dominode planted at the beginning of the 20th century, from which it produces a powerful red built for ageing. Domaine Tollot-Beaut, based in Chorey-lès-Beaune, holds the monopole of Champ Chevrey, a generous and consistent cuvée that has done much to raise the village's profile. The legendary Domaine Leroy produces a Savigny-lès-Beaune premier cru Les Narbantons that has become a collector's item, while the great Beaune négociants such as Louis Jadot and Bouchard Père et Fils regularly vinify reference cuvées from the appellation.

How long should a Savigny-lès-Beaune wine be kept?

The ageing potential of a Savigny-lès-Beaune wine depends on its colour, the slope it comes from and its appellation level. Village-level reds are ideally enjoyed between five and ten years, the period when the fruit and suppleness are best expressed. The premier crus from the northern slope, more approachable, open up after four to six years and hold comfortably for around twelve years. The premier crus from the southern slope, in particular La Dominode and Les Narbantons, require more patience: they often need eight years to come together and evolve superbly over fifteen to twenty years in great vintages, developing notes of undergrowth, truffle and spice. The whites are best drunk between four and eight years, with the finest reaching ten to twelve years.

To preserve this potential, store your bottles on their sides, in darkness and away from vibrations, at between 11 and 13 degrees, with a humidity level of 70 to 75%. Serve the reds between 14 and 16 degrees and the whites between 11 and 13 degrees. Decanting for thirty minutes to an hour benefits younger premier crus, while older vintages, more delicate, simply need careful opening just before serving, or even just a wide glass.
