Chavost Brut Nature Paradoxe, a non-vintage Champagne from the Côteaux Sud d’Épernay, blends 60% Chardonnay and 40% Pinot Meunier. With no sulfites or dosage, it offers chalky minerality and fine bubbles after 20 months on the lees. Fresh and taut, it pairs beautifully with shellfish and raw fish.
Nestled in the heart of the Côteaux Sud d’Épernay, Domaine Chavost combines a cooperative heritage with a pursuit of purity in viticulture.
- Terroir: The chalky and limestone soils of the Vallée de la Marne, home to a Champagne AOC where minerality finds elegant expression.
- Winemaking: A natural approach, with no added sulfites, produces lively, taut cuvées aged for an extended period on the lees.
Tasting notes for Chavost Brut Nature Paradoxe
In the glass: Pale gold and crystal clear, with green highlights and fine, persistent bubbles.
On the nose: Crisp green apple, hawthorn blossom and candied lemon aromas, lifted by a saline touch and a hint of damp chalk.
On the palate: A silky, vibrant texture, supported by precise acidity and chalky minerality, extends into a long, saline finish.
Serve at 6–8°C in a Champagne flute to preserve its freshness and tension.
Non-vintage
Carefully blended, this cuvée reflects the consistency of a style in which pure fruit and the terroir’s minerality achieve a harmonious balance.
- Aging potential: Enjoy now or cellar for up to 5 years in a cool place, away from light.
