Managed by Emmanuel Lassaigne, this family-run business cultivates 4.7 hectares of biodynamic vines on a unique chalk terroir, often compared to a Champagne pearl, to produce champagnes of rare purity and elegance.
This Extra Brut champagne, with a light dosage of 3 g/l, highlights a perfect balance between freshness and complexity. Composed of 100% Chardonnay, it is the result of a blend of several vintages, partly vinified in barrels and aged on lees for 3 to 4 years, giving it a subtle aromatic richness.
To the eye, its pale gold color sparkles with delicate bubbles. On the nose, aromas of green apple, preserved lemon and white flowers mingle with chalky minerality and a touch of brioche. On the palate, it offers a silky texture, lively freshness and a saline finish, with hints of hazelnut and citrus. Perfect as an aperitif or with seafood, this champagne embodies Jacques Lassaigne's refined signature.
