The Saint-Romain En Chevrot 2023 from Domaine Petit-Roy draws its minerality from the chalky soils of the Côte de Beaune. This Chardonnay offers notes of citrus, a lively acidity and a silky texture. Ideal for cellaring 6 to 10 years, it pairs with oysters, fish or goat's cheese.
A family estate rooted in the hillsides of the Côte de Beaune, where the precision of the terroir engages in dialogue with a refined winemaking approach.
- Terroir: The clay-limestone soils of Saint-Romain, fully east-facing, impart a chalky minerality to the Chardonnays, combining freshness and depth.
- Winemaking: Aged in tanks to preserve the purity of the fruit, with reduced sulphur for a faithful expression of the En Chevrot climat.
To the eye: Pale golden robe with green highlights, of silky clarity and mineral brilliance.
On the nose: Aromas of lime and white peach intertwine with notes of acacia blossom, before a saline touch underscores the chalky freshness of the terroir.
On the palate: The attack is lively, carried by a precise acidity that unfolds flavours of stone fruit and a taut minerality, leading to a long and saline finish.
Serve between 10 and 12°C, in a Burgundy glass to capture its elegance.
A vintage marked by a beautiful tension between ripeness and freshness, where the natural balance of the Chardonnay expresses itself with precision.
- Ageing potential: To be cellared for 6 to 10 years in a cool, humid cellar, away from light.
