The Bourgogne Aligoté 2021 from Domaine Petit-Roy reveals the marly soils of Aux Boutières. Old Aligoté vines (1983), aged in used barrels for a fresh and mineral wine. Citrus, white flowers and chalky minerality. Pairings: fish, seafood. Cellaring: 2–3 years.
A family estate rooted in the hillsides of Savigny-lès-Beaune, where biodynamics guides every gesture with respect for the terroir.
- Terroir : Vines planted in 1983–1984 on the clay-limestone and marly soils of the lieu-dit Aux Boutières, in Bourgogne Aligoté.
- Winemaking : Direct pressing, spontaneous fermentation in used barrels and ageing without new oak to preserve the purity of the grape variety.
- To the eye : A pale yellow colour with green highlights, of a silky and vibrant clarity.
- On the nose : Aromas of lime, tart apple, elderflower and a saline touch, carried by a chalky minerality.
- On the palate : A lively and precise attack, sustained by an elegant tension, notes of flint and a long, persistent saline finish.
Serve between 8 and 10°C in a white Burgundy glass to reveal all its freshness.
A vintage marked by a mineral freshness, where the balance between acidity and ripeness expresses itself with finesse.
- Ageing potential : To be enjoyed within 3 to 5 years, stored away from light and temperature variations.
