The history of Champagne Guiborat begins in 1885 in Cramant, a village classified Grand Cru at the heart of the Côte des Blancs. For five generations, the Fouquet family has cultivated its vines with love and determination on exceptional terroirs. Richard Fouquet, who took over the helm of the estate in 1996 at the age of 21, embodies this passion inherited from his ancestors. Originally from the Paris region, he chose to return to Cramant to fulfil his childhood dream: to produce champagnes of incomparable purity and authenticity. Accompanied by his wife Karine, he has transformed the estate into an essential reference among the independent producers of Champagne.
Historically, the family sold a large portion of its grapes to the Maison Laurent-Perrier, a loyal client. However, Richard decided to reserve the finest plots to craft his own cuvées, thereby reducing production to around 25,000 bottles per year. This bold approach, rare at the time, allowed Champagne Guiborat to distinguish itself with wines of exceptional quality, prized by connoisseurs and lovers of artisanal champagnes. Today, the estate combines tradition and modernity, while remaining true to its family roots.
The Guiborat estate covers 8 hectares, located primarily in the Grand Cru-classified villages of Cramant, Chouilly and Oiry, as well as a plot of pinot meunier in Mardeuil, near the Vallée de la Marne. Only 3 hectares, the highest quality ones, are dedicated to the production of the estate's cuvées, with the remainder being sold to négociants such as Laurent-Perrier. These exceptional terroirs, nestled on the gentle slopes of the Côte des Blancs, rest on a soil of Campanian chalk, formed more than 70 million years ago. This chalk, derived from the sediments of microscopic algae, imparts a distinctive minerality to the wines, characterised by a powdery finish and an elegant tension.
The vines, aged between 30 and 70 years, are cultivated according to the principles of organic farming, without pesticides or insecticides, although the estate holds no official certification. Richard Fouquet favours natural treatments based on herbal infusions and essential oils, resorting to chemical products only in cases of extreme weather conditions. Richard Fouquet limits the use of wood to just 20% for certain cuvées, such as Prohibition, so as not to mask the natural characteristics of the fruit. Malolactic fermentation is generally avoided for the premium cuvées, such as Prisme and De Caurés à Mont Aigu, in order to retain a lively acidity and elegant tension. By contrast, the entry-level cuvée, Tethys, sometimes benefits from this fermentation to offer a rounder and more accessible texture.
The champagnes rest on lees in the cellars carved into the chalk beneath the estate, where temperature and humidity conditions are ideal for optimal aging. The aging periods are generous: Tethys spends a minimum of 24 months on lees, while the other cuvées, such as Prisme, benefit from 40 to 44 months, or even longer for magnums. The dosage is kept very low, between 1.5 and 5 g/l, to enhance the purity and precision of the wines.
