Burgundy is home to some of the most prestigious wines in the world. Among the great red crus, Chambertin, Musigny and Romanée-Conti stand at the top of the hierarchy, produced from exceptional plots in the Côte de Nuits. On the white wine side, Montrachet and Corton-Charlemagne represent the absolute excellence of Chardonnay. These grand cru appellations account for only 1.5% of total Burgundy production, which explains their rare character and worldwide reputation.

The aging potential varies depending on the appellation level and the vintage. A regional Bourgogne is generally best enjoyed within 3 to 5 years following the harvest. A premier cru can be kept between 8 and 15 years, depending on the estate and the vintage. Grand crus, on the other hand, can age for several decades: some Gevrey-Chambertin or Chambolle-Musigny reach their peak after 20 to 30 years in the cellar. Sunny vintages such as 2015, 2019 or 2020 generally offer better aging potential thanks to their fine concentration of tannins and natural acidity.

The Burgundy hierarchy is one of the most precise in the world. A premier cru designates an identified plot or lieu-dit whose name may appear on the label alongside that of the village, such as Chambolle-Musigny Les Amoureuses. The grand cru, for its part, represents the supreme level: the plot is so renowned that it stands on its own as an appellation, with no mention of the village. Thus, one simply says Musigny or Bâtard-Montrachet. In Burgundy, there are 33 grand cru appellations and several hundred premiers crus, located primarily in the Côte d'Or and Chablis.

Burgundy is built on a philosophy of grape variety simplicity: two main varieties dominate the entire vineyard. Pinot Noir reigns supreme for red wines, offering fine, elegant wines of great aromatic complexity. Chardonnay asserts itself for whites, capable of expressing both the sharp minerality of Chablis and the buttery roundness of the great whites of the Côte de Beaune. This focus on two noble grape varieties is a worldwide singularity: where other regions blend several varieties, Burgundy bets everything on the pure expression of terroir through a single grape variety.

Burgundy Pinot Noir is one of the most gastronomic grape varieties there is, thanks to its finesse and natural acidity. It pairs wonderfully with beef bourguignon, the quintessential regional pairing, roasted poultry such as Bresse chicken, duck with cherries, and soft-rind cheeses like Époisses and Soumaintrain. For younger, fruitier wines, fine charcuterie and terrines also make excellent companions. Slow-cooked, patiently simmered dishes remain the royal road to showcasing a fine red Burgundy.

A red Burgundy wine is ideally served between 14 °C and 16 °C. At this temperature, the Pinot Noir reveals the full finesse of its aromas: cherry, raspberry, violet, and truffle depending on the age of the wine. Too warm, it appears heavy and alcoholic; too cold, it closes up and loses its aromatic expression. For a white Burgundy, a temperature of 11 °C to 13 °C is recommended in order to balance freshness and complexity. It is advisable to take the bottles out of the refrigerator about twenty minutes before serving.
