Created in 1947, Domaine Belluard is located in the heart of the Arve valley, in the village of Ayse in Savoie. Its vineyard, which spans nearly 11 hectares of vines, including 10 hectares of white varieties, is planted on steep slopes of calcareous scree, and its singularity lies in the cultivation of the Gringet grape variety, a grape endemic to Savoie. This Gringet variety, very little known, is virtually only grown within the AOC Ayse appellation (covering a total of 22 hectares across around a dozen producers), and Domaine Belluard produces almost half of it with its 10 hectares.

The Belluard estate holds a unique place in the Savoyard wine landscape thanks to its near-exclusive mastery of the gringet grape variety. This endemic variety grows only in Ayse, in Haute-Savoie, and exists nowhere else in the world — barely twenty hectares remain in total, of which approximately half belong to the estate. This unique concentration of an ultra-confidential terroir in the hands of a single producer makes it an essential reference for lovers of rare and authentic wines.
Yes, Domaine Belluard is a pioneer of biodynamic viticulture in Savoie. Having started with a conventional approach, Dominique Belluard gradually integrated the principles of organic and then biodynamic farming, definitively crossing that threshold in 2001, thanks in particular to the teachings of François Bouchet and Pierre Masson. This philosophy, founded on respect for the natural balances of living things, is directly reflected in the purity and depth of the wines produced on the estate.
Dominique Belluard, a visionary winemaker and true ambassador of Gringet, passed away suddenly in 2021, leaving an immense void in the world of Savoyard wine. The estate has since been taken over by Vincent Ruiz, a young winemaker trained under Franck Balthazar in Cornas, who renamed the property "Domaine du Gringet" in homage to the grape variety so dear to his predecessor. The cuvées continue in the same guiding direction: natural, precise, and deeply rooted in their alpine terroir.
The estate is located in the commune of Ayse, in Haute-Savoie, at the heart of the Arve valley, halfway between Geneva and Chamonix, on steep hillsides facing due south at an altitude of 450 metres. The geological diversity there is remarkable: one finds red clays rich in alumina and iron on the emblematic plot "Le Feu", argilo-calcareous strata for the cuvée "Grandes Jorasses", and calcareous scree from the Chablais massif for "Les Alpes". It is this mosaic of soils that gives the wines of Domaine Belluard their characteristic minerality.
The Belluard estate offers several iconic cuvées, all crafted from gringet or other rare Savoyard grape varieties. Among the most sought-after are "Le Feu", a single-parcel expression on red clays considered the most complex of the estate, "Les Perles du Mont-Blanc", a 100% gringet sparkling cuvée praised for its energy and minerality, and "Les Alpes", a dry white of remarkable alpine freshness. The estate also produces a 100% altesse cuvée and a confidential red mondeuse bottled at approximately 1,000 bottles per year only.
The white wines of Domaine Belluard, marked by a lively acidity, a stony minerality, and complex aromas of white fruits, citrus, and alpine flowers, pair with a wide variety of dishes. The cuvée "Les Perles du Mont-Blanc" naturally finds its place as an aperitif or with seafood dishes and delicate starters, while "Monsieur Gringet" reveals itself fully alongside scallops gratin with hazelnuts or a roast veal accompanied by spring vegetables. The more complex and aged cuvées, such as "Le Feu", deserve a decanter and blossom with alpine gastronomy dishes.
Founded in 1947 by the Belluard family, the estate began as a mixed-farming operation combining vines, orchards and livestock, on land acquired in the late 1940s in the micro-vineyard of Ayse. In the 19th century, the region boasted more than 300 hectares of vines, but phylloxera, wars and rural exodus reduced this area to around twenty hectares by the 1980s. It was in 1988 that Dominique Belluard, freshly graduated in viticulture and oenology from Beaune, took over the family estate and brought to it a visceral passion for indigenous grape varieties. Recognising the potential of Gringet, an endemic white variety present since Antiquity and reduced to just 22 hectares worldwide, he steered the estate towards the exclusive production of great terroir wines. In 2001, a decisive turning point: the conversion to biodynamics, inspired by figures such as Pierre Masson, to restore the vitality of the soils and express the Alpine soul of the wines. Under the guidance of Dominique, a perfectionist of few words and a lover of the Alps, Domaine Belluard became a world reference for natural wine enthusiasts, with cuvées celebrated by Michelin-starred restaurants and demanding sommeliers alike. The sudden passing of Dominique in June 2021 left an immense void, but his wife Valérie, supported by friends such as Jean-François Ganevat, completed the 2020 vintage with great dedication, ensuring a transition towards new horizons while honouring his legacy.
The vines of Domaine Belluard thrive on steep hillsides at 350–450 metres above sea level, facing south and sheltered by the Môle massif from the cold northern winds. This historic vineyard, documented as far back as the 11th century, rests on a mosaic of Alpine terroirs of exceptional diversity: calcareous scree from the Chablais, yellow and white marls derived from glacial moraines, red clays rich in iron alumina, and glacial sediments that absorb solar heat for optimal ripening despite the harsh Alpine climate. More than 95% of the 10 hectares are planted with Gringet, this unique and wild variety with compact clusters, complemented by 3% Mondeuse and 2% Altesse. Farmed using uncertified biodynamics since 2001, the vines benefit from winch-assisted ploughing to respect the vertiginous slopes (up to 40°), with no chemical pesticides or synthetic inputs. Preparations based on cow manure and silica strengthen the plants' resilience, while the proximity of Mont Blanc lends the grapes a vivid acidity and crystalline minerality.
At the cellar of Domaine Belluard, winemaking honours the biodynamic philosophy: a minimalist accompaniment of the living to preserve the identity of the terroir. The grapes, harvested by hand, undergo a slow and gentle pressing, followed by spontaneous fermentations with indigenous yeasts only, with no added sulphur or filtration. Ageing takes place in ovoid concrete tanks or amphoras, encouraging a natural movement of the lees that brings texture and stability without manual batonnage. For the sparkling wines, the traditional Champagne method includes an extended stay on lees (up to two years) for greater complexity. This holistic approach, free from chemistry and excessive intervention, produces precise wines, vibrant with mineral energy and Alpine aromas, where each cuvée faithfully reflects its soil of origin, from taut calcareous scree to the more opulent red clays.
Domaine Belluard offers six emblematic cuvées, comprising two sparkling wines, three white Savoie wines and a rare red Mondeuse, each with a unique aromatic personality and great finesse.
Belluard Mont Blanc Brut Zéro: Crafted using the traditional method from 100% Gringet, this undosed sparkling wine since 2014 offers an intense floral nose and a creamy, taut and complex palate. Fresh and upright, with notes of warm mirabelle plums and patchouli, it is an ideal gastronomic wine to accompany seafood or aged cheeses. Minimal sulphur for a remarkable Alpine purity.
Les Perles du Mont Blanc (AOC Ayse): Finer and more mineral than its sibling, this 100% Gringet sparkling wine captivates with its discreet bubbles and aromas of spiced citrus, wild mint and saline minerals. Perfect as an aperitif, it evokes the freshness of mountain torrents, with an airy texture and a persistent finish.
Les Alpes de Belluard (Vin de Savoie white): A blend dominated by Gringet, this taut white unfolds intense aromas of pear, quince and white flowers, underpinned by a richness in dry extracts and a crystalline acidity. Elegant and airy, it can be kept for 4 to 6 years, and pairs well with grilled fish or poultry.
Les Grandes Jorasses (Vin de Savoie white): Made from 100% Altesse (Roussette de Savoie), this cuvée expresses a beautiful opulence on the palate, with notes of ripe fruit, gentle spices and a deep minerality. Rich and well-balanced, it pairs perfectly with creamy dishes or goat's cheese.
Le Feu de Belluard (Vin de Savoie white): A single-varietal Gringet from a plot on ferruginous red clays — the "hot spot" of the estate — this deep and austere wine requires aeration to reveal its subtle notes of verbena, gentian and white peach. Flamboyant, textured and vibrant, it gains in clarity after 2–3 years of cellaring, like a supercharged Alpine Chablis.
Mondeuse (Vin de Savoie red): Unique and rare (approximately 1,000 bottles per year, from 3% of the vineyard), this old-vine cuvée vinified as whole-cluster and aged in concrete tanks offers a refined fruit, fine tannins and a mineral salinity. Superb with excellent ageing potential, it elevates red meats or game dishes, with a style unique to Savoie.
