The Sous le Mont (Disgorgement February 2025) by Jacques Selosse, from Grand Cru Pinot Noir in Mareuil-sur-Aÿ, is an Extra Brut of great precision. Notes of red apple, dark tobacco and praline, with a taut and saline palate. Ideal for cellaring, it pairs beautifully with Peking duck or pan-fried porcini mushrooms.
Nestled in the heart of Avize, this family estate embodies the demands of a terroir and the transmission of artisanal know-how.

Tasting notes for Jacques Selosse Sous le Mont (Disgorgement February 2025)
In the eye – A golden robe with copper reflections, of a silky texture and a fine, almost creamy effervescence.
On the nose – Aromas of ripe red apple, lightly toasted gingerbread, wild blueberry and salted caramel, lifted by a mineral touch and a hint of noble oxidation.
On the palate – A lively and precise attack, where the tension of Pinot Noir blends with a dense and velvety texture, carried by notes of dark tobacco, praline and dried fruits, leading to a long and saline finish.
Serve between 10 and 12°C in a champagne flute or a white wine glass to bring out its complexity.

Crafted from a blend of several years, this champagne combines the freshness of young wines with the depth of reserve wines, for a unique expression of the terroir.
- Ageing potential: 15 to 20 years, or even longer, in cool cellar conditions (12–14°C) and away from light.
