The Marc Soyard Côteaux de Dijon Cras Monopole 2023, from the clay-limestone slopes of Dijon, offers a precise and vibrant Pinot Noir. Aged in used barrels, it combines cherry and raspberry with a mineral touch. On the palate, silky and fresh, it pairs with roasted meats or slow-cooked dishes over the next 3 to 5 years.
Anchored on the limestone slopes of Dijon, this family estate reinvents Burgundian elegance with a natural and precise approach.
- Terroir: Clay-limestone soils of the Côteaux de Dijon, east- and west-facing plots, where Pinot Noir draws its chalky minerality and tension.
- Vinification: Hand-harvested, semi-carbonic maceration with whole bunches, aged in used barrels to preserve the purity of the fruit.
In the glass: A ruby robe with vivid reflections, of a silky and luminous texture, heralding a wine that is both dense and airy.
On the nose: Freshness of cherry and wild raspberry, followed by notes of wild strawberry, a touch of gentle spices and a saline minerality in the background, like an echo of the chalky soils.
On the palate: A precise attack, fine and taut tannins, lively acidity balanced by a fleshy texture and a long finish, where red fruits and a hint of graphite intertwine.
Serve at 14-16°C in a Burgundy glass to release its aromas.
