The name “Folatières” means “wild land” and refers to the eroded soil. High on the hillside above Clavoillons, where the soil is thin, Puligny Montrachet 1^er Cru Folatière produces a full-bodied wine with abundant minerality. Xavier Monnot’s plot has old vines planted between 1959 and 1973. The wine is aged for 12 to 14 months, with one-third new oak. The nose offers aromas of lemon, mandarin, dried white flowers and spice, alongside gentle pastry notes. On the palate, it is fine and refined, with lively acidity and an elegant profile. Its mineral, saline finish is impressively long, and it can be cellared for at least 10 years. As for red Burgundy wines, Xavier Monnot’s Volnay 1^er Cru Clos des Chênes is fairly structured, though in its early years its tannins may need a little time to soften.
