Before permanently renaming the domaine de Meursault in his own name in 2005, Xavier MONNOT had joined the family estate since 1994. From 1994 to 2005, the Burgundy wines were still under the René Monnier label (who was Xavier's grandfather). With 17 ha of vines spread across 9 villages in the Côte de Beaune and offering no fewer than 18 wines, Xavier Monnot produces wines that are immediately seductive, yet also capable of ageing gracefully.

No chemical weed control is practiced on the Xavier Monnot estate, and only organic fertilizers are used. Xavier Monnot works his 17 hectares of vineyard on the terroirs of Meursault, Puligny Montrachet and Chassagne Montrachet, while applying modern winemaking methods, producing wines that are accessible in their youth. The simple Bourgogne blanc les Grandes Coutures by Xavier Monnot is an always very open and expressive wine, which will fully satisfy tasters looking for an excellent quality-to-price ratio. The Meursault les Chevalières by Xavier Monnot, whose plot is situated directly on the outcropping bedrock, displays even greater mineral tension. Its position falls directly under the influence of the cool westerly winds coming from the Combe d'Auxey Duresses. The nose features yellow fruits and white flowers, with notes of almonds and toasted bread. On the palate, the wine is full, concentrated and saline, with tension and beautiful energy. It should be noted that it is advisable in principle to wait a few years after bottling before opening the Premiers Crus from the Xavier Monnot estate, lest one find at tasting an oak influence that can seem pronounced. Xavier Monnot ages his wines in this way to allow them to evolve over the years, after which the wines are dense and mouth-watering, as wide as they are long. Xavier Monnot produces a Meursault 1er Cru Les Charmes that ranks among the most impressive of the Côte d'Or, proving powerful and generous, built on stimulating bitter notes evoking citrus zest, with an almost tannic sensation on the finish. The Puligny Montrachet 1er Cru Les Folatières by Xavier Monnot is one of the best known for its size and the quality of its wines. The name "Folatières" meaning "wild land" and referring to the eroded soil. Situated at the top of the hill above Clavoillons with poor soil, the Puligny Montrachet 1er Cru Folatière yields a full-bodied wine with great minerality. Xavier Monnot's plot has old vines planted between 1959 and 1973. The aging period is 12 to 14 months, including one third new oak. On the nose, the wine presents aromas of lemon, mandarin, dried white flowers, spices and gentle pastry notes. On the palate, the wine is fine and refined in character, underpinned by beautiful acidity and an elegant profile. Its finish is mineral and saline, of very good length, and it can be cellared for at least 10 years. On the red Burgundy side, wines such as the Volnay 1er Cru Clos des Chênes by Xavier Monnot are fairly structured, but they may present, during their early years, some tannins that need a little time to integrate.
