At the heart of the Côte des Bar, in the charming village of Polisot (Aube), Champagne Piollot embodies the perfect alliance between Champenois tradition and sustainable innovation. For five generations, this family estate has carefully cultivated its 8.5 hectares of vines to produce exceptional wines, reflecting a unique terroir and ancestral expertise. Certified in organic farming since 2014 and more recently in biodynamics, Domaine Piollot stands out for its ethical commitment and its pursuit of authenticity.
The history of Champagne Piollot begins in the 19th century with Athanase Piollot (1817–1906), the first winemaker of the lineage, who laid the foundations of this family estate in Polisot. Since then, each generation has enriched this heritage with passion and determination. Damase Piollot, his son, actively participated in the winemakers' revolt of 1911, a landmark event that secured the Aube's place within the Champagne appellation. René Piollot, then Robert Piollot (1930–2003), continued this tradition by expanding the plots and perfecting viticultural techniques. Robert, a true pioneer, devoted his life to mass selection — a method of choosing the best plants to preserve the quality and genetic diversity of the vines. It is to him that we owe the iconic Pinot Blanc plot, "Val Colas Robin", cleared by hand with a pickaxe in 1955.
In 1986, Roland Piollot, son of Robert, marked a decisive turning point by deciding to vinify and market the entire production under the Piollot label. Accompanied by his wife Dominique Moreau and, since 2018, by their daughter Jeanne, Roland propelled the estate to international renown, particularly in Europe and Japan. In 2009, the estate began its conversion to organic farming, completed with Ecocert certification in 2014, before fully embracing biodynamics in 2020 with Demeter certification. Located in the Côte des Bar, the Piollot estate benefits from an exceptional terroir, characterised by marl soils and a Kimmeridgian clay-limestone subsoil, similar to that of Chablis. Thanks to the mass selection initiated by Robert Piollot, these vines retain a strong identity, far removed from standardised clonal plants. The estate works biodynamically, following the lunar calendar to optimise natural cycles, and uses preparations such as horn manure and silica to stimulate soil life and plant resilience. This approach, combined with a home-made compost elaborated from grape marc, local manure, and straw, ensures healthy grapes and a balanced terroir. The winemaking philosophy of Champagne Piollot is built on minimal intervention, allowing the terroir and the grapes to express themselves fully. The base wines are predominantly aged in stainless steel tanks to retain their freshness, although a portion is matured in oak barrels or large casks to bring complexity and roundness, particularly for cuvées such as "Mepetit" or "Champs Rayés". Fermentations rely on indigenous yeasts, reinforcing the local identity of each plot.
The second fermentation takes place in the bottle, following the traditional Champagne method, with ageing on lees ranging from 2 to 6 years depending on the cuvée. The estate favours zero-dosage or low-dosage Champagnes (extra-brut), highlighting the natural richness of the grapes rather than the addition of sugar. For the rosés, such as "Les Protelles", a short maceration (saignée rosé) enhances the fruity aromas of the Pinot Noir.
