Aurore Casanova, nestled in the heart of Champagne in Mardeuil, is an ode to nature and authenticity. Founded in 2013 by Aurore Casanova and Jean-Baptiste Robinet, this family estate of 3.8 hectares is committed to environmentally respectful viticulture, certified organic since 2023. Specialising in the production of Grand Cru Champagnes, the estate highlights exceptional terroirs through vibrant and elegant cuvées. The story of Domaine Aurore Casanova is one of a bold career change and a shared passion. Aurore, a former classical dancer at the Zurich Opera, grew up in Paris while remaining connected to her mother's vines, planted in 1968 in the Montagne de Reims. After an international career, she decided in 2011 to return to her Champenois roots. It was in Avize, during her training in viticulture and oenology, that she met Jean-Baptiste Robinet, who comes from a winegrowing family and was formerly a designer of innovative prosthetics. Their meeting marked the beginning of a shared adventure, driven by a vision: to produce Champagnes that capture the soul of the terroirs of Champagne while respecting nature.
In 2013, Aurore took over her mother's family plots in Puisieulx, while Jean-Baptiste leased vines from his own family. Together, they settled in a historic farmhouse in Mardeuil, near Épernay, and founded Domaine Aurore Casanova. Their first cuvée was born in 2016, marking the beginning of a confidential yet acclaimed production. Inspired by emblematic winemakers such as Anselme Selosse, they adopted a biodynamic approach, favouring environmentally respectful practices and natural winemaking. Today, the estate is recognised as one of the emerging talents of Champagne, producing approximately 15,000 bottles per year, each imbued with finesse and authenticity.
Domaine Aurore Casanova draws its richness from the diversity of its terroirs, located in the most prestigious regions of Champagne: the Montagne de Reims, the Côte des Blancs, and the Vallée de la Marne. Each plot is carefully cultivated according to biodynamic principles to fully express its unique character.
Montagne de Reims (Puisieulx): The plots of Puisieulx, classified as Grand Cru, are primarily planted with Pinot Noir (mass selection from 1968–69) and Chardonnay (1988). The clay-loam soils over hard limestone, with an eastward exposure, give the grapes a pronounced minerality and elegant tension, ideal for structured and complex Champagnes.
Côte des Blancs (Mesnil-sur-Oger and Oger): With 19 plots in Mesnil-sur-Oger and 3 in Oger, the estate excels in the production of Grand Cru Chardonnay. The chalky soils, covered with fine brown earth or chalky colluvium, offer perfect conditions for wines of great purity. The varied exposures of the plots, notably in the amphitheatre of Mesnil-sur-Oger, bring a unique complexity, with notes of citrus and a mineral tension.
Vallée de la Marne (Champvoisy): The Meunier vines, planted in 2015 on brown marl soils over hard limestone, express fruity aromas and a pleasingly rounded quality. The exposure promotes optimal ripeness while preserving the freshness of the grapes.
Certified organic since 2023, the vines are cultivated without synthetic herbicides or insecticides. Aurore and Jean-Baptiste incorporate biodynamic practices, respecting lunar cycles and promoting biodiversity. Manual harvesting ensures a rigorous selection of grapes, essential for producing exceptional Champagnes.
The philosophy of Domaine Aurore Casanova is rooted in minimalist winemaking, aimed at allowing the purity of the terroirs to express itself. Each step is carried out with artisanal precision, inspired by the observation and contemplation of the vines.
Pressing and Fermentation: The grapes are pressed traditionally in stainless steel plate presses, encouraging gentle extraction. Fermentations, exclusively spontaneous using indigenous yeasts, take place in stainless steel tanks or oak barrels (228 and 400 litres), depending on the cuvée. This natural approach guarantees authentic aromas and a faithful expression of the terroir.
Aging: The wines are aged on fine lees, without racking, for 8 to 11 months, which adds complexity and texture. The perpetual reserves, initiated from 2016 for certain cuvées, add depth and roundness. No fining or filtration is carried out, preserving the integrity of the wine.
Aging and Dosage: After bottling, the Champagnes rest in the cellar for 2 to 3 years, developing fine effervescence and complex aromas. The dosages, often extra-brut, are carried out using liqueurs from the perpetual reserves, lending a touch of indulgence while respecting the natural freshness of the wines.
This minimally interventionist approach, combined with meticulous manual work, allows the estate to produce vibrant, elegant Champagne deeply rooted in their terroirs.

Cuvée Aure
This harmonious cuvée, a blend of 45% Chardonnay, 45% Pinot Noir, and 10% Meunier, embodies freshness and elegance. With 35% reserve wines, it is aged 8 months in stainless steel tanks to preserve its purity, then aged 2 to 3 years in bottle. Its extra-brut dosage, enriched with a perpetual reserve, lends it a pleasingly rounded quality. On tasting, its brilliant golden-yellow robe reveals aromas of brioche and white fruits, followed by a creamy, delicate palate, perfect for an aperitif or a moment of sharing.
Cuvée Rosé
Rich and structured, this cuvée combines 44% Chardonnay, 34% Pinot Noir, 10% Meunier, and 12% red Pinot Noir wine aged in barrels. Aged 8 months in stainless steel tanks and 2 to 3 years in bottle, it benefits from an extra-brut dosage with a perpetual reserve liqueur. Its salmon-hued rosé robe reveals a nose of red fruits and spices (vanilla, cinnamon). On the palate, it offers a rounded texture, notes of wild berries, and fine bubbles, ideal with gastronomic dishes.
Cuvée Le Mesnil-sur-Oger (Malo)
From the Grand Cru plot "Malo" in Mesnil-sur-Oger, this 100% Chardonnay cuvée expresses the power and minerality of the Côte des Blancs. Aged 11 months in barrels, with a perpetual reserve initiated in 2017, it is bottled without fining or filtration. Its deep golden robe precedes a broad palate, rich in candied citrus and chalky tension, with a saline finish. Perfect with seafood or refined dishes.
Cuvée Puisieulx Chardonnay
From the Grand Cru lieu-dit "Les Petites Vignes" in Puisieulx, this Blanc de Blancs Grand Cru (Chardonnay from 1988) is vinified in barrels with spontaneous fermentations. Aged 11 months on lees and bottled without filtration, it offers a golden robe and a broad, complex palate with a saline finish evoking sea spray. Cuvée Puisieulx Pinot Noir
