Taken over in 2019 by Aurélien Lemaire following his return to the family estate in 2016, this 6-hectare property (spread across 18 plots) was immediately converted to organic farming with biodynamic practices, a radical approach that is revolutionizing the region. Predominantly chalky soils, a diversified grape variety selection (Chardonnay, Pinot Noir, Pinot Meunier, Petit Meslier, Arbanne, Pinot Gris), active agroforestry, fermentation with indigenous yeasts, aging in barrels (and even in a Georgian qvevri buried near the cellar), marketed as zero dosage and vintage wines. The cuvées (Les Terres Jaunes, La Guinguette, La Trempette) bridge the gap between the niche world of natural Champagne and lovers of grower Champagnes.

Domaine Aurélien Lemaire was born from a family passion for the vine and wine, passed down from generation to generation. Located in Vertus, a village classified Premier Cru, the estate has its roots in a long winemaking tradition. Aurélien Lemaire gradually took over the family estate in the early 2010s with a clear ambition: to produce high-precision Champagnes that respect their origin and carry a strong identity.

Fermentations take place predominantly in stainless steel tanks, sometimes complemented by aging in barrels for certain cuvées. Malolactic fermentations are not systematic, allowing tension and freshness to be preserved when the vintage demands it.
