In the heart of the Côte des Bar, in the Champagne region’s Aube department, a winegrowing project of rare integrity has been taking root since 2019. Champagne Alizée and Thibault Tassin embodies a new way of making and buying champagne: artisanal, committed and deeply rooted in its terroir. Here there are no compromises or stylistic flourishes, only wines whose precision and authenticity set them apart from the region’s industrial standards. This small, little-known estate, producing no more than 6,000 bottles a year from barely more than one hectare of vines, offers champagnes of rare depth and personality.

The history of Champagne Tassin is rooted in a long family winemaking tradition in the Côte des Bar, a distinctive area of southern Champagne. The Tassin family has grown vines in the Aube since the late 18th century, helping to shape the winemaking identity of a region that long remained out of the spotlight.
It was with Thibault Tassin and his wife Alizée, however, that the estate took a decisive turn. Eager to break away from traditional models and offer their own vision of champagne, the couple decided to create a project of their own. They acquired just over a hectare of vines in Celles-sur-Ource, an emblematic Côte des Bar village, and renovated an old farmhouse to house their cellar and winemaking facilities.
This new generation embraces an artisanal approach grounded in observation, patience and an understanding of living ecosystems. Their ambition is clear: to produce distinctive, coherent terroir-driven champagnes that can rival those of major Champagne houses while maintaining a personal, committed approach. The move toward environmentally respectful viticulture soon became an obvious choice, marking a defining stage in the history of Domaine Tassin.
Champagne Tassin’s style has its roots in the remarkable terroirs of the Côte des Bar, whose Jurassic clay-limestone soils resemble those found in Burgundy. This geological character gives the wines a pronounced vinous quality, ripe fruit and a structure ideally suited to producing champagnes with character.
Pinot Noir, the predominant grape variety at Domaine Tassin, shows its intensity here, bringing depth, texture and aromatic complexity. Chardonnay plays a supporting role, adding freshness, tension and precision that balance the wine beautifully. The Aube’s more southerly climate, slightly warmer than northern Champagne, allows the grapes to ripen fully while retaining the acidity essential to balanced sparkling wines.
In the vineyard, Alizée and Thibault Tassin favor practices that respect the soil and living ecosystems. They encourage ground cover, use mechanical interventions judiciously and limit treatments to what is strictly necessary. This approach, close to the principles of organic and natural wines, aims to preserve biodiversity and strengthen the expression of terroir in every bunch of grapes harvested.
Winemaking at Champagne Tassin is intended as a natural extension of the work done in the vineyard. In their artisanal cellar, the winemakers favor a low-intervention approach, allowing the grapes and terroir to express themselves as freely as possible.
Fermentation takes place with native yeasts, without the use of selected yeasts, to preserve the grapes’ aromatic identity. The base wines are vinified with precision, primarily in stainless steel tanks to retain the fruit’s freshness and purity, but also in old barrels for certain cuvées, adding complexity and depth without imparting too much oak character.
Extended aging on the lees encourages a delicate texture and fine mousse. Domaine Tassin opts for low dosage—or none at all for certain Brut Nature cuvées—to reveal the wines’ mineral backbone and natural tension. This approach produces focused, elegant champagnes with a long finish, highly sought after by wine enthusiasts and collectors interested in aging potential.
The Champagne Tassin range stands out for its coherence and clarity. Each cuvée is conceived as a precise interpretation of the terroir.
This signature cuvée is a Blanc de Noirs Brut Nature made exclusively from Pinot Noir. From the 2022 harvest, it captivates with its fine bubbles, vinous structure and remarkable aromatic precision. Barrel aging lends it depth and elegance, making this champagne a true gastronomic wine.
A blend of Pinot Noir and Chardonnay, The Beautiful Plots is vinified and aged in old barrels, then released without dosage. It offers a remarkable balance of freshness, complexity and length on the palate, perfectly illustrating Domaine Tassin’s precise, refined style.
Dalivard stands out for its finesse and exceptional drinkability. Approachable yet sophisticated, this cuvée offers clear aromas and a smooth palate, making it an ideal introduction to the world of Champagne Tassin without compromising on quality.
Made predominantly from Pinot Noir, The Vials offers an intense, profound expression of the Côte des Bar terroir. Its delicate texture, persistence and precision make it a cuvée highly prized by lovers of champagnes with character.
The champagnes of Champagne Tassin lend themselves naturally to a wide range of food pairings. The Blanc de Noirs cuvées are ideal with roast poultry, white meats, mushrooms or lightly truffled dishes. Blends of Pinot Noir and Chardonnay pair beautifully with fine fish, seafood or soft cheeses. Thanks to their structure and finesse, these champagnes can also accompany an entire meal, from appetizer to dessert.
Champagne Tassin has become a benchmark in the Côte des Bar, embodying a discerning, sincere and committed vision of grower champagne. Through respectful viticulture, precise winemaking and a constant pursuit of balance, Alizée and Thibault Tassin create distinctive, elegant and deeply expressive cuvées.
