The Roulot estate produces several highly sought-after cuvées, all crafted from Chardonnay on the finest terroirs of Meursault. Among the village appellations, one finds in particular les Tessons, les Vireuils, les Charmes and les Perrières, each wine offering a precise expression of its place of origin. Jean-Marc Roulot and his cellar master Éric Bodin focus particularly on the premier crus Charmes, Perrières and Bouchères, as well as on exceptional village wines such as les Tillets, producing wines of great minerality and finesse.

The style of Domaine Roulot is built on a resolutely non-interventionist philosophy. After a very gentle pressing, fermentation takes place exclusively with indigenous yeasts. The wines are then aged on lees in barrel for 12 months, followed by 6 months in tank, with limited use of new oak, between 10 and 30% depending on the cuvées and vintages. Jean-Marc Roulot has also chosen to vinify separately the different lieux-dits of Meursault in order to express the specificities of each plot, an approach that has earned him unanimous recognition among his peers.

The Roulot estate is a family affair whose roots run deep in Burgundian history. The history of the estate begins at the end of the 18th century in Meursault, but it is in the 20th century that it truly takes flight under the impetus of Guy Roulot, father of Jean-Marc, who revolutionizes local winemaking by introducing single-vineyard bottlings. After the sudden death of Guy in 1982, it is Jean-Marc Roulot, then an actor in Paris, who takes over the reins of the estate in 1989 while simultaneously pursuing a career in cinema, notably in films such as Back to Burgundy by Cédric Klapisch.

Yes, Domaine Roulot committed very early to an environmentally responsible approach. Jean-Marc Roulot converted the vineyard to organic farming as early as the 1990s, then to biodynamics in the early 2000s, obtaining Demeter certification in 2013. In practice, the soils are ploughed, ground cover is natural, treatments are exclusively of biological origin, and yields are deliberately limited to promote the concentration and tension of the wines.

The Meursault wines from Domaine Roulot, with their pronounced minerality, freshness, and silky texture, lend themselves to beautiful gastronomic pairings. They pair perfectly with refined dishes such as grilled fish, seafood, or poultry in light sauces. Classic pairings such as salt-crusted sea bass, pan-seared scallops, or pike with beurre blanc particularly highlight their elegance and vivacity.

The wines from Domaine Roulot are renowned for their remarkable ageing potential. The Meursault cuvées, whether villages or premier crus, are recognised for their ability to evolve gracefully over the years, thanks to their structuring acidity and mineral backbone. Jean-Marc Roulot cultivates a precise and chiselled style, favouring elegance and tension over immediate richness, which gives his wines one of the most solid ageing capacities in the Meursault appellation. Generally allow between 8 and 20 years of cellaring for the premier crus in great vintages.

History of Domaine Roulot

The history of Domaine Roulot began at the end of the 18th century in the village of Meursault, but it was in the 20th century that the estate truly took flight under the impetus of Guy Roulot. This visionary, father of Jean-Marc and Michèle, revolutionised winemaking in Meursault by introducing parcel-by-parcel bottlings, highlighting the diversity of the village's terroirs. His marriage to Geneviève Coche, from a prestigious family in the region, enriched the estate with exceptional plots. Following Guy's sudden death in 1982, the estate went through a transitional period, with winemakers such as Ted Lemon and Franck Grux ensuring continuity. In 1989, Jean-Marc Roulot, then an actor in Paris, decided to take over the reins of the estate while continuing his artistic career. His vision, marked by a pursuit of purity and precision, propelled Domaine Roulot to the ranks of Burgundy's greatest names. Since the 1990s, Jean-Marc has been converting the vineyard to organic farming, then to biodynamics in the early 2000s, obtaining DEMETER certification in 2013. Today, the estate spans 15.5 hectares and continues to shine through its commitment to quality.

Terroirs and Vines of Domaine Roulot

Domaine Roulot cultivates 15.5 hectares of vines, planted primarily with Chardonnay (14.5 hectares), with a small proportion of Aligoté (6%) and Pinot Noir (1 hectare). Located on the southern slopes of Meursault, the estate's plots benefit from varied terroirs, ranging from deep clay soils to more stony calcareous soils, which lend the wines their unique minerality and complexity. Among the emblematic lieu-dits, one finds Tillets, Vireuils, Luchets, Narvaux, Meix Chavaux and Tessons, as well as prestigious premier crus such as Les Perrières, Les Charmes, Les Porusots and Clos des Bouchères. The vines, with an average age of 45 years, are the result of replanting carried out by Guy Roulot in the 1950s, enhancing the quality and depth of the grapes. Jean-Marc favours a biodynamic approach to viticulture, free of herbicides, with manual ploughing to preserve the microbial life of the soils. His philosophy is based on early and short pruning, avoiding green harvesting, and precise manual harvesting to ensure healthy and balanced grapes, picked slightly early to preserve their natural acidity. This meticulous approach allows the wines to faithfully reflect the identity of each terroir.

Winemaking at Domaine Roulot

Winemaking at Domaine Roulot is a model of precision and minimalism, aimed at sublimating the expression of the terroir. The grapes, harvested by hand in small crates, undergo gentle pneumatic pressing to obtain a high-quality juice. Fermentations, carried out with indigenous yeasts, take place in oak barrels for a period of 11 to 12 months, followed by 6 to 7 months in stainless steel tanks. This period of aging on the lees, without bâtonnage, preserves the freshness and tension of the wines while reducing the influence of wood. The use of new oak varies from 10 to 30% depending on the cuvées and vintages, ensuring a subtle balance between the richness of the fruit and the oak notes. The wines are lightly clarified, then carefully filtered before bottling, with a slight sulphur adjustment during aging and at bottling. This minimally interventionist approach, combined with extreme care at every stage, yields wines of remarkable purity and elegance, capable of aging gracefully.

The Cuvées of Domaine Roulot

Domaine Roulot produces a varied range of cuvées, each reflecting the singularity of its terroir. 

Bourgogne Aligoté: Sourced from vines covering 6% of the estate's surface, this Aligoté offers vibrant freshness and citrus notes, perfect for immediate enjoyment.

Bourgogne Chardonnay: Produced on 2.64 hectares from the lieu-dits Durots, Dressoles, Malpoiriers, Herbeux, Veaux, Sous le Chemin and Grandes Coutures, this wine combines elegance and accessibility, with a citrus finish and beautiful tension.

Auxey-Duresses Blanc: Sourced from 0.48 hectares of 60-year-old vines, this wine, vinified in the same manner as the Meursaults, displays a pronounced minerality and a slight austerity, ideal for pairing with a meal.

Monthélie 1er Cru Champs Fuillot: Produced on 0.19 hectares, this rare white reveals complex aromas and a silky texture, testament to Jean-Marc's expertise.

Meursault Village: A blend of plots such as Clos de la Baronne, Les Vireuils, Les Gruyaches, Les Crotots and Sous la Velle, this generous and persistent wine is approachable from a young age.
