This means that each bottle is crafted exclusively from the grapes of a single year, selected for its exceptional character. Dom Pérignon even chooses not to declare a vintage if the result does not meet the expected level of excellence — a rare standard that profoundly sets this house apart in the world of Champagne.

Patience is at the heart of Dom Pérignon's philosophy. Vintage cuvées age on lees for at least eight years, and up to 25 years for Plénitude 3 (P3) cuvées. This long ageing process preserves the freshness of the fruit while allowing aromas of great complexity to develop. At Dom Pérignon, a wine reaches the peak of its complexity more than 30 years after the vintage year, an exceptional longevity that makes it one of the champagnes best suited for cellaring.

The first Dom Pérignon cuvée was crafted from a 1921 vintage wine and commercially released from 1935. Its name pays tribute to Dom Pierre Pérignon, a Benedictine monk at the Abbey of Hautvillers near Épernay, who devoted his life to perfecting Champagne winemaking techniques. He notably contributed to the blending of grape varieties, the clarification of wine, and the use of the cork stopper. Today, the house is part of the LVMH group and continues to uphold this legacy of excellence with each new vintage.

Dom Pérignon Champagne is based on two iconic grape varieties: Pinot Noir and Chardonnay, expertly blended to combine structure and aromatic freshness. The grapes come exclusively from vineyards classified as Grands Crus, as well as from the renowned Premier Cru of the Abbaye d'Hautvillers, spread across prestigious terroirs such as the Montagne de Reims, the Côte des Blancs, and the Vallée de la Marne. This exceptional terroir base, covering approximately 600 hectares, forms the foundation of the house's unique aromatic signature.

The Plénitudes (P1, P2, P3) are a concept unique to Dom Pérignon, developed to express the different stages of maturity of a single vintage over time. This concept aims to offer champagnes that have reached particular stages of their maturation, in order to follow their evolution throughout their ageing process. Concretely, the same vintage is tasted at three distinct moments in its life, each time offering a different aromatic profile: livelier and more taut in P1, broader and deeper in P2, and of an almost meditative complexity in P3.

Since 1921, only 46 vintages have been produced, among which the most remarkable are 1921, 1928, 1947, 1959, 1961, 1970, 1982, 1990, 1996, 2002, 2008 and 2010. For a special occasion, the 2008 vintage is particularly appreciated for its complexity and luminosity, while the 1982 remains an absolute reference, rated 96/100 by Robert Parker. For a contemporary gift, the 2012 and 2015 vintages offer a particularly appealing balance between aromatic richness and accessibility.

History of Maison Dom Pérignon

Maison Dom Pérignon takes its name from the famous Benedictine monk Pierre Pérignon, often regarded as the "spiritual father" of champagne. Born in 1638, Dom Pierre Pérignon settled at the Abbey of Hautvillers, in the Champagne region, in 1668, where he set out to create the "best wine in the world". His innovative approach to blending grapes and his passion for winemaking left a lasting mark on the history of Champagne viticulture. Although he was not truly the inventor of sparkling champagne, his contributions to the quality of wines produced in the region left an indelible impression.

According to legend, it was he who perfected the Champagne method by hermetically sealing bottles of white wine with beeswax, thereby triggering a second fermentation and giving rise to the effervescence so characteristic of champagne. This myth was largely perpetuated by Maison Moët & Chandon, which acquired the Abbey of Hautvillers in 1823 and which, in 1936, launched the first Dom Pérignon cuvée, vintaged 1921. Since then, fewer than 50 vintages have come into existence, all marked by an unparalleled standard of quality.

Today, Dom Pérignon belongs to the prestigious luxury group LVMH, which continues to keep the legend alive while perpetuating the excellence and worldwide renown of the house.

The crafting of Dom Pérignon champagnes is based on a rigorous selection of the finest crus from the Champagne region. The grapes come exclusively from vineyards classified as Grands Crus, as well as from the renowned Premier Cru of the Abbey of Hautvillers. With a total surface area of over 1,200 hectares, these vineyards are spread across prestigious terroirs such as the Montagne de Reims, the Côte des Blancs, and the Vallée de la Marne.

Winemaking at Maison Dom Pérignon

Winemaking at Dom Pérignon is a meticulous process that emphasizes respect for the terroir and the typicity of each vintage. Unlike other Champagne houses, Dom Pérignon produces only vintage champagnes, meaning those derived from a single harvest year. Each vintage thus tells a unique story, that of the viticultural year from which it originates.

Fermentation in stainless steel tanks preserves the freshness and purity of the aromas. Once bottled, the cuvée undergoes a long aging on lees, of at least eight years for Vintage cuvées, and up to 25 years for Plénitude 3 (P3) cuvées. This slow and delicate process allows the wine to develop complex aromas while retaining great freshness.

The Chef de Caves, Vincent Chaperon, who succeeded Richard Geoffroy in 2019, ensures that this tradition of excellence is upheld. He does not hesitate to decline to declare a vintage if the quality of the harvest does not meet the standards required by the Maison. Only the finest grapes are selected to give rise to exceptional champagnes, imbued with lightness, richness and elegance.

The Cuvées of Maison Dom Pérignon
