The "mythical" Pierre Overnoy took over the family estate in 1968; The Pierre Overnoy estate is established in the small village of Pupillin, located 3 km south of Arbois in the Jura, and Pierre Overnoy particularly distinguished himself by vinifying his wines without the addition of sulphur from 1984 onwards, to the point of becoming an icon of "natural wine". It was the physicist Jules Chauvet, a talented taster and father of the natural wine movement, who inspired him with his sharp approach and initiated him into the winemaking practices to which he has remained faithful.

The Domaine Pierre Overnoy holds a unique place in the history of French natural wine. Pierre Overnoy, born in 1937, is a historic pioneer in the production of natural wine in France. As early as the 1950s, he perceived chemical herbicides as a threat to the environment, going against the dominant trend of the time. It was the physicist Jules Chauvet — a talented taster and founding figure of the natural wine movement — who inspired him with his rigorous approach and introduced him to the winemaking practices to which he has remained faithful. This unique journey, built over decades of conviction and exacting standards, has made the domaine an absolute icon of natural wine, admired well beyond the borders of the Jura.

The estate's approach is based on total consistency, from the soil to the bottle. The vines are cultivated using organic farming and biodynamics. In the cellar, the wines are aged and bottled without the addition of sulphur or any other chemical product. Fermentation is carried out with indigenous yeasts; after their work, they break down through autolysis to provide the wine with the nutrients necessary for long ageing. It is this radically natural, net-free approach that gives the estate's cuvées their living character and their exceptional ageing potential.

The whites from the Overnoy-Houillon estate stand out for their remarkable depth and exceptional longevity. The ageing process is very long, in barrels sometimes up to 9 years with topping up, which gives the wines a smooth texture and a majestic oxidation. These white wines have a strong personality, are highly aromatic and display great ageing potential — qualities that clearly set them apart in the Jura wine landscape. Chardonnay and Savagnin express their terroir with a precision and purity that few estates in the world can claim.

The estate is located in Pupillin, a Jura village situated a few kilometres south of Arbois. The grape varieties include savagnin, trousseau, poulsard and chardonnay, over a total surface area of approximately 6 hectares. These grape varieties, typical of the Jura, give rise to whites of great aromatic complexity and reds of remarkable finesse, all vinified according to the principles of natural wine with no chemical inputs or added sulphur.

Pierre Overnoy passed on the estate to his adoptive son Emmanuel Houillon-Overnoy in 2001. Emmanuel perpetuates the expertise and sensibility that Pierre taught him since his arrival at the domaine in 1989. Discreet and perfectionist, Emmanuel Houillon today tends the vines using biodynamic methods and produces wines in perfect continuity with those of his mentor. Pierre Overnoy remains present, particularly during tastings, bearing witness to a human transmission as rare as the domaine's bottles themselves.

The rarity of wines from Domaine Pierre Overnoy can be explained by several combined factors. The estate's annual production is approximately 20,000 bottles only, which is extremely low given worldwide demand. Since late 2015, the wines have been breaking price records at auction, and after the very difficult 2012, 2013 and 2014 vintages due to vine diseases and adverse weather conditions, these cuvées have become even rarer, especially as enthusiasts remain extremely loyal to them. Purchasing a bottle from Domaine Pierre Overnoy is today a true opportunity, as demand far exceeds the supply available on the market.

The estate could have had a very different fate, for with no heirs and at the age of 64, Pierre Overnoy chose to hand over the reins in 2001 to Emmanuel Houillon, whom he regarded as his spiritual son and who had been working alongside him since 1989. The succession was a success, and Emmanuel Houillon, accompanied by his wife Anne, today perpetuates the work of his "mentor" at the Domaine Pierre Overnoy, with wines that are in perfect continuity with those of Pierre Overnoy. Discreet and perfectionist, Emmanuel Houillon now tends, on this magnificent terroir, the 6 ha of vines using biodynamic farming. The white Jura wines have strong personalities, endowed with a broad aromatic palette and impressive ageing potential. It must be said that the very long ageing periods (in barrels sometimes up to 9 years, with topping up as for the 2000 and 2003 vintages) give them a smooth texture and a majestic oxidation. The 2014 chardonnay offers a remarkably full-bodied substance for the vintage, a sensuality (fresh butter) immediately cut through by a sharp, sovereign acidity, unmistakably identified as belonging to the Jura. The red Jura wines with their glistening colours are silky, fresh and unctuous. The poulsard red, with its characteristic orange hue, offers an enchanting perfume of dried flowers and candied citrus, extended by a fine and perfectly ripe tannic structure. Unfortunately, the public's enthusiasm for these wines, as rare as they are precious, has led to a galloping inflation in the prices of the Overnoy-Houillon estate's cuvées.
