History of Domaine Jacques Carillon

The history of the Carillon family in Puligny-Montrachet is one of the longest and most remarkable in all of Burgundy. When the Cistercian monks of Cîteaux and the abbots of Cluny were laying the first stones of the Burgundian vineyard in the Middle Ages, passing down their unique knowledge from generation to generation, the roots of this family were already beginning to sink into this soil of limestone and clay. A civil record attests that one Jehan Carillon was a winegrower in Puligny as early as 1520 — five centuries of devotion to the vine and the terroir.

It was under the impetus of Louis Carillon, from the 1960s onwards, that the family domaine began its ascent to the summit. Louis made bold decisions for the time: the abandonment of mixed farming, an exclusive focus on chardonnay, the adoption of manual harvesting at a time when mechanization was spreading, and the courageous choice to vinify and age his own wines rather than selling the grapes to the Beaune négociants. The extended aging of around 18 months, which he practised from the very beginning, became the domaine's signature.

After his studies at the viticultural school in Beaune, Jacques Carillon joined his father in 1980, devoting himself primarily to winemaking and sales. In 2010, the historic domaine was divided between Louis's two sons, Jacques and François. It was at this point that Jacques, assisted by his wife Sylvia, officially founded Domaine Jacques Carillon, drawing on three decades of experience accumulated within the family domaine. This turning point marked the beginning of a new chapter, equally brilliant, in a viticultural saga that began more than five hundred years ago.

Terroirs and Vines of Domaine Jacques Carillon

Puligny-Montrachet is located about twelve kilometres south of Beaune, nestled between Meursault to the north and Chassagne-Montrachet to the south. Its vineyard of some 210 hectares, of which 120 are classified as premier cru, constitutes one of the most coveted terroirs in the world for the production of great white wines. Domaine Jacques Carillon holds 5.25 hectares carefully positioned on the finest climats of the appellation.

The vines, averaging around forty years of age, are deeply rooted in calcareous brown soils and beds of argillaceous marls characteristic of the Côte de Beaune. This unique geological composition gives the wines their tension, their sharp minerality and their remarkable aging potential. The predominantly east and south-east facing exposure ensures regular and controlled ripening of the chardonnay, while preserving the natural acidity essential to the balance and length of the wines.

The domaine is established across several exceptional lieux-dits and climats. Among the premier crus, Les Champs Canet, Les Referts and Les Perrières each offer a singular expression of the Puligny terroir. The domaine also holds a precious plot in the grand cru Bienvenues-Bâtard-Montrachet, a confidential production that represents the pinnacle of the Burgundian hierarchy. Vines situated in the neighbouring appellations of Chassagne-Montrachet and Saint-Aubin premier cru Les Pitangerets complete the domaine's holdings.

The farming philosophy is rooted in respect for the plant and the soil. No herbicides are used; the work follows an approach of integrated pest management that preserves biodiversity and the microbial life of the soils. As Jacques Carillon himself says: "Respect the plant, never constrain it." This attention devoted to the vineyard, vintage after vintage, is the foundation of the unfailing quality of the domaine's wines.

Winemaking at Domaine Jacques Carillon

The winemaking philosophy of Domaine Jacques Carillon rests on a central conviction: the wine must above all speak of the place from which it comes. Every technical decision is therefore guided toward the most faithful and purest expression of the terroir.

After manual harvesting, the grapes are carefully pressed. A settling period of 12 to 18 hours removes the coarser lees before the juice is transferred to barrel to undergo both alcoholic and malolactic fermentation. This choice to ferment directly in barrel rather than in tank promotes greater complexity and texture in the wines.

Oak barrel aging lasts approximately 12 months. The proportion of new wood is deliberately limited to a maximum of 20–25%, including for the grand cru Bienvenues-Bâtard-Montrachet: the aim is to enhance the fruit and the terroir without masking them beneath a veil of oak. This restraint in the use of new wood is one of the domaine's hallmarks, favouring precision over showmanship.

After barrel aging, the wines are transferred en masse into stainless steel tanks for a further six months. This stage encourages the gradual harmonization of the various components, refines the texture and preserves the freshness characteristic of the domaine's wines. A light filtration precedes bottling. In total, from harvest to release, the aging process spans approximately 18 months — a duration that allows the wines to fully develop their potential while remaining fruit-forward.

The resulting style is imbued with an assured classicism: thoroughbred power, verticality, refined minerality, persistent freshness. These wines are built to age, and it is in their relative youth that they already reveal a rare elegance and complexity.

The Cuvées of Domaine Jacques Carillon

Puligny-Montrachet Village

The domaine's entry-level wine is anything but ordinary. The Puligny-Montrachet Village by Jacques Carillon is a blend drawn from eleven small plots scattered across seven different lieux-dits within the Puligny-Montrachet appellation. This mosaic of terroirs offers a complete and nuanced expression of the appellation: one finds the lemony minerality and tension characteristic of Puligny, alongside a juicy flesh and remarkable aromatic persistence. The vines, around forty years old, produce a wine of great purity, aged 12 months in barrels (15% new oak) then 6 months in stainless steel tanks. 

Chassagne-Montrachet

From the neighbouring appellation, the domaine's Chassagne-Montrachet embodies a slightly different style from the Puligny: fuller on the palate, with notes of toasted hazelnut and white flowers complementing the Burgundian minerality. The same restraint in aging, the same precision in winemaking. A wine of fine craftsmanship, often more approachable earlier than the premier crus, which illustrates Jacques Carillon's transversal expertise beyond his appellation of election.

Saint-Aubin 1er Cru Les Pitangerets

Les Pitangerets is one of the most reputed premier crus of Saint-Aubin, an appellation that offers one of the finest entry points into the great white wines of the Côte de Beaune. Under Jacques Carillon's hand, this premier cru reveals a lively freshness, aromas of white flowers, citrus and flint, a taut and mineral palate reminiscent of the Puligny style at a fraction of the price.

Puligny-Montrachet 1er Cru Les Referts

Located in the southern part of the Puligny appellation, the Les Referts climat produces wines of great finesse and deep minerality. The domaine's plot is planted with old chardonnay vines averaging 52 years of age, cultivated across 0.24 hectares — a confidential production. Aging of 12 months in barrel (20% new oak) followed by 6 months in stainless steel tank gives rise to a straight, precise wine with remarkable tension and a salivating finish. It reaches its full potential after 5 to 8 years of cellaring.

Puligny-Montrachet 1er Cru Les Champs Canet

Les Champs Canet is one of the most prestigious premier crus of Puligny-Montrachet, adjacent to the illustrious Chevalier-Montrachet. Jacques Carillon's wine here is of rare nobility: a discreet and promising nose with floral and mineral notes, a palate of beautiful density, an elegant and very taut texture, a long and persistent finish. In its youth, it may seem reserved, but its structure guarantees magnificent aging over 8 to 12 years. 

Puligny-Montrachet 1er Cru Les Perrières

Les Perrières is an emblematic climat of Puligny-Montrachet, whose name alone evokes the stony and calcareous nature of the subsoil. Jacques Carillon's cuvée expresses a particularly refined minerality, almost carved from the rock, accompanied by a restrained richness of fruit and exceptional length on the palate. More structured than Les Referts, more airy than Les Champs Canet, this premier cru is an admirable synthesis of the Carillon style. It deserves 6 to 10 years of cellaring to reveal its full complexity.

Bienvenues-Bâtard-Montrachet Grand Cru

The absolute pinnacle of the domaine, Bienvenues-Bâtard-Montrachet is one of the smallest grand crus in Burgundy, shared among a handful of elite producers. Jacques Carillon's plot is tiny, and production is extremely limited. The wine it yields combines a thoroughbred power and a striking minerality with an aromatic richness of rare complexity: white flowers, acacia honey, candied citrus, flint, fresh butter... The palate is at once opulent and vertical, the finish of an impressive length. Even here, Jacques Carillon does not exceed 20–25% new oak, allowing the terroir to express itself in all its grandeur. A legendary wine, to be kept for at least 10 years and capable of traversing two decades with absolute grace.
