Nestled in the heart of the Côte des Bar, this family estate embodies the alliance of a Kimmeridgian terroir and biodynamic viticulture, guided by a quest for purity.
- Terroir : Clay-limestone soils of the Aube, south-facing, where Pinot Noir draws its minerality and tension.
- Winemaking : Artisanal method – indigenous yeasts, barrel aging, no dosage – for undosed champagnes, vibrant with naturalness.
Tasting notes for Champagne Clandestin Austral Brut Nature 2022
To the eye – A golden robe with pale highlights, animated by a stream of fine and persistent bubbles, betraying a silky texture and a chalky elegance.
On the nose – Aromas of white peach and fresh apricot intertwine with notes of toasted brioche, acacia blossom and a saline touch, like a sea breeze over the limestone hillsides.
On the palate – A lively and precise attack, carried by a taut acidity that stretches into a saline minerality, while the vinous texture envelops the palate with a saline and persistent length.
Serve between 10 and 12°C in a narrow champagne flute to preserve the freshness and fineness of the bubbles.
