Discover Clandestin Austral Brut Nature, an exceptional champagne born of the ambitious project of Benoît Doussot and Bertrand Gautherot, based in Buxières-sur-Arce, in the Côte des Bar region. This biodynamic estate highlights the unique terroirs of the Aube region.
Made from 100% Pinot Noir grapes, this champagne comes from south-facing plots on a Kimmeridgian terroir combining clay and limestone, giving it a mineral richness. The vinification is handcrafted: organic grapes, spontaneous fermentation with indigenous yeasts in 350 to 500-liter oak barrels, aged on lees for 10 months and 15 months on laths, with no dosage (0 g/l), for absolute purity.
To the eye, its golden color reveals fine bubbles. On the nose, tasting notes offer a gourmet bouquet of white peach, stone fruit and brioche, with a floral touch. On the palate, it seduces with its vinous texture, lively acidity and saline finish, marked by elegant minerality. Perfect as an aperitif or with shellfish, this vibrant champagne embodies the contemporary excellence of the Côte des Bar.
