A family estate rooted in the sun-drenched hillsides of the Côte des Bar, where Benoît Doussot cultivates the art of parcel Champagne with quiet rigor.
– Terroir: South-facing vineyards on clay-limestone soils, in the Champagne appellation, where Pinot Noir reveals a chalky minerality and a saline tension.
– Vinification: A low-interventionist method – natural fermentation in Burgundian barrels, extended aging on the lees, without filtration or dosage, to preserve the purity of the fruit and the complexity of the terroir.
Tasting notes for the wine Champagne Clandestin Austral Brut Nature R22
On the eye: Golden robe with green highlights, of a silky texture and crystalline brilliance that heralds a dense and vibrant substance.
On the nose: Aromas of candied lemon and blood orange zest intertwine with notes of ripe white flowers, before a saline touch and a hint of toasted hazelnut come to anchor the bouquet in a mineral depth.
On the palate: A lively and precise attack, where the tension of the citrus fruits (red apple, Williams pear) blends with a smooth texture, carried by an elegant acidity and a chalky, long and fresh finish.
Serve at 10°C in a tulip flute to concentrate the aromas and preserve the delicacy of the bubbles.

A sun-drenched vintage, where the ripeness of the fruit is balanced by a vivid acidity, offering a Champagne that is at once generous and taut.
– Aging potential: 5 to 8 years, to be stored between 10 and 12°C, away from light and vibrations.
