History of Champagne Stroebel

The history of Domaine Stroebel begins in the 1930s, when Timothée's grandfather, originally from Alsace, settled in Villers-Allerand, a Premier Cru classified village nestled in the Montagne de Reims. In the 1960s, he planted the first vines, laying the foundations of a family winemaking tradition. After two generations without winemakers, Timothée Stroebel decided to take over this heritage in 2001. Trained in Beaune, Burgundy, where he acquired expertise in oenology and a sensitivity for organic methods, he reunited the scattered family parcels. In 2005, he produced his first wines, marking the beginning of a bold adventure.

In 2008, Timothée fully committed to organic viticulture, continuing a transition begun by his uncle. After a decade of meticulous work, the estate obtained organic certification in 2014. This approach reflects Timothée's commitment to revitalizing the soils and respecting the ecosystem, while producing Champagne wines of remarkable purity. Today, Champagne Stroebel is a leading figure of the new Champagne generation, celebrated for its vibrant and expressive wines.

Terroirs and Vineyards of Champagne Stroebel

Champagne Stroebel extends over 3.5 hectares of vines, exclusively located in Villers-Allerand, an exceptional terroir in the Montagne de Reims. The parcels, composed of 55% Pinot Meunier, 30% Pinot Noir, and 15% Chardonnay, benefit from varied soils: deep clays, light sands, and chalky limestone. This geological diversity allows Timothée to vinify each parcel separately, thus capturing the unique nuances of each terroir. The vines, some of which exceed 50 years, are considered "treasures" by the winemaker, who values their low yield to obtain grapes of exceptional quality.

Committed to peasant agriculture, Timothée practices biodynamic viticulture, favoring natural grassing and experimenting with sheep grazing to maintain the soils. He limits the use of copper, preferring innovative solutions such as water enriched with micro-organisms and essential oils. This manual work, often carried out with his horses Bijou and Quina, strengthens the vitality of the ecosystem, attracting insects and birds. Winemaking at Champagne Stroebel

Timothée Stroebel's winemaking philosophy is based on a non-interventionist approach, aimed at preserving the essence of the terroir. In the cellar, he favors large neutral oak barrels (400 L and more), often sourced from Chassagne-Montrachet, to age his wines without imparting pronounced woody notes. The alcoholic and malolactic fermentations are spontaneous, carried out with indigenous yeasts to reveal the unique character of the grapes. No dosage, filtration, or cold stabilization is performed, guaranteeing Brut Nature Champagnes of natural freshness and creaminess.

Timothée adds a minimal amount of sulfur (9 to 15 mg/L) only if necessary, during pressing, to prevent oxidation and promote the expression of the yeasts. The Champagnes benefit from a long aging on lees, often 36 months, which gives them complexity and slightly oxidative notes. For the Coteaux Champenois, Timothée harvests the grapes at high maturity, sometimes 15 days later than for Champagnes, in order to obtain still wines of an intensity comparable to great Burgundy crus. This artisanal approach makes the wines of Champagne Stroebel an essential choice for lovers of natural winemaking.

The Cuvées of Champagne Stroebel

Champagne Stroebel offers a range of cuvées that celebrate the diversity of its terroirs and grape varieties. Each wine is a unique expression of Timothée's expertise and his commitment to sustainable practices.

Triptyque

This signature cuvée, a Brut Nature, is a blend of 33% Chardonnay, 33% Pinot Noir, and 34% Pinot Meunier, from three terroirs (sand, chalk, clay) and the vintages 2014 to 2016. Aged 36 months on lees, it reveals aromas of red fruits, apple, flowers, and toasted notes. On the palate, it offers a powerful and creamy texture, ideal for accompanying refined dishes. Its absence of dosage and vinification in neutral barrels make it a Champagne of remarkable purity.

Héraclite Sous Bois

Another Brut Nature, this cuvée showcases the estate's three grape varieties (Pinot Meunier, Pinot Noir, Chardonnay) from vines averaging 52 years old. Vinified in neutral oak barrels and aged 36 months on lees, it reveals notes of black cherry, pepper, and underbrush for the Pinots, and white fruits and flowers for the Chardonnay. Its fresh and mineral palate pairs perfectly with roasted pigeon or aged Comté cheese.

Héraclite Blanc de Blancs

This ephemeral cuvée, made from 2017 Chardonnay, is a tribute to the purity of the grape variety. From Premier Cru vines, it is vinified with indigenous yeasts in old oak barrels, without dosage. Its aromas of candied lemon, fresh almond, and iodine notes offer a rare complexity, with a mineral and elegant finish.

Héraclite Blanc de Noirs

Centered on Pinot Meunier, this cuvée reveals the nobility of this often underestimated grape variety. With notes of red fruits, pepper, and underbrush, it combines intensity and freshness. Vinified without filtration or dosage, it expresses the richness of the estate's old vines and captivates with its refined character.

Pour Toi !

This Brut Nature combines the 2017 and 2018 vintages, with a balanced blend of Pinot Meunier, Pinot Noir, and Chardonnay, from sandy, limestone, and clay soils. Aged in large oak barrels, this unfiltered Champagne offers a complex aromatic palette, with fruity notes and a silky texture. Its uniqueness makes it a bold choice for lovers of atypical Champagnes.

A Rosé de Saignée Brut Nature, from the unique parcel "Les Paquis". Vinified in oak barrels, this rosé reveals exceptional richness and power, with intense red fruit aromas and an elegant structure. Ideal for festive occasions, it embodies Timothée's boldness.

Le Vin Tranquille (Coteaux Champenois Blanc)
