Although the Montagne de Reims is particularly rich in Pinot Noir, the Vilmart-Champs family has a fondness for Chardonnay, which accounts for 60% of the 11 hectares of plots that make up the estate. Over the years, the Vilmart house has forged a strong and singular identity, and the quality and finesse of its wines are today unanimously recognised. The vinification of all the cuvées is carried out exclusively in wood (in a combination of old Alsatian foudres and recent barrels), which lends the wines their singular character, bringing fruitiness, roundness and finesse. The absence of malolactic fermentation is one of the other specificities unique to Vilmart's white Champagnes. The freshness, tension, finesse and typicity of aromas are thus preserved. After 10 months of vinification in wood, the wine is bottled and rests in the estate's chalk cellars for 3 to 4 years for non-vintage wines, and 5 to 8 years for vintage Champagnes. The Vilmart range includes 3 cuvées: the Grande Réserve Champagne cuvée, composed of 70% Pinot Noir and 30% Chardonnay, benefiting from 10 months of ageing in oak foudres, without malolactic fermentation and dosed at 9 gr. Its golden-blonde robe heralds a wine dominated by Pinot Noir with beautiful maturity. Animated by a fine effervescence, this cuvée is characterised by its intensity, opening on aromas of biscuit, ripe wheat, pear and cherry. The nose then becomes broader and more complex, delivering delicate notes of iris, oak and white pepper. With aeration, notes of melted butter and toasted bread emerge, marking a harmonious evolution of the wine. The finesse of the mineral notes brings complexity and depth, finding its balance between aromas of fruit, biscuit, bread, butter, minerals and spices. The Vilmart Grand Cellier Champagne cuvée, 70% Chardonnay and 30% Pinot Noir, releases enticing toasted notes of candied lemon, bergamot and grapefruit, accompanied by floral notes of honeysuckle and lilac, on a creamy touch of fresh butter. The wine also expresses spicy notes of ginger and lemongrass, and the sensation of sweet indulgence that accompanies it remains very digestible. With aeration, the evolving and ageing notes appear and enrich the whole: the nose is complex, refined, with great character delivering an overall creamy and harmonious texture sustained by a beautiful acidity that stretches the wine throughout the tasting. The finish is clean, slightly mineral and long, with delicate citrus bitters leaving the memory of a dynamic and vigorous wine. The Vilmart « Grand Cellier millésimée » Champagne cuvée stands apart with a very elegant, airy, floral, spring-like nose and, on the palate, notes of candied pineapple, cardamom and white pepper. The expression is mature, complex and displays great personality. The wine continues to evolve in the glass with aromas of cinnamon and spiced bread. The vinosity expresses itself through richness and oak — this is a beautiful gastronomic Champagne.
