Château Ausone A legendary estate nestled on the hillsides of Saint-Émilion, where the poetic legacy of Ausonius blends with the exacting standards of an exceptional terroir. - Terroir: Seven hectares of clay-limestone soils with asteria, on the southern slopes of Saint-Émilion, shaping wines of rare minerality and timeless elegance. - Vinification: Manual harvesting, plot-by-plot vinification in small wooden vats, and 20 months of ageing in new barrels within underground quarries, for a pure and precise expression.
Tasting notes for Château Ausone 1990 To the eye: A deep red robe with amber reflections, of a silky texture and chalky density that already heralds the wine's complexity. On the nose: Aromas of amber and candied fruit cake intertwine with notes of crushed rock and incense, before giving way to a fruity freshness and a saline touch, like a mineral breath rising from the hillsides. On the palate: A velvety attack, carried by a lively acidity and elegant tension, where the clay-limestone minerality unfolds into a long and saline finish, leaving an impression of purity and depth. Serve at 16–18°C in a Bordeaux glass to release its full complexity.
Vintage 1990 A sunny and generous vintage, where the ripeness of the grapes gave birth to a wine of rare opulence, while retaining a remarkable freshness and structure. - Ageing potential: Ready to enjoy now, with a conservation potential until 2032, provided it is stored under optimal conditions (stable temperature, controlled humidity).
