Château Ausone Nestled on the slopes of Saint-Émilion, this family estate embodies the excellence of a legendary terroir, shaped by centuries of expertise. - Terroir: Clay-limestone soils of the Saint-Émilion plateau, where the minerality of the astéries sublimes the historic grape varieties. - Vinification: Manual harvesting, aging in oak barrels and plot-by-plot vinification for a pure and precise expression of the terroir. Tasting notes for Château Ausone 1988 To the eye: A red garnet robe with tawny reflections, of a silky density and a brilliance subtly veiled by time. On the nose: First aromas of black cherries and candied raspberries, followed by notes of blond tobacco, damp undergrowth and a touch of cedar, all lifted by a chalky minerality and a saline hint. On the palate: A velvety yet taut texture, carried by a lively acidity and a persistent minerality, with a long and elegant finish where soft spices and melted tannins intertwine. Serve at 16-18°C in a Bordeaux glass to release its full complexity. Vintage 1988 A vintage marked by contrasting climatic conditions, where the rigor of the terroir allowed a rare elegance to be expressed despite the challenges. - Aging potential: To be enjoyed until 2040, to be stored in a cool cellar (12-14°C) away from light.
