Tasting notes for Château Ausone 2012 Appearance: A deep red robe with garnet highlights, of a silky density and crystalline brilliance, immediately revealing its concentration and maturity. On the nose: First notes of violet and wild blackberry, followed by a touch of candied blackcurrant, then gentle spices – white pepper and liquorice – before ending on a subtle chalky salinity, the signature of the terroir. On the palate: A velvety yet taut texture, carried by a lively acidity and a limestone minerality that extends into a long and precise finish, where dark fruits, blonde tobacco and a hint of graphite mingle. Serve at 16–18°C in a Bordeaux glass to release its full complexity.
