History of Champagne Tassin

The history of Champagne Tassin is part of a long family winemaking tradition within the Côte des Bar, a singular territory of southern Champagne. The Tassin family has been cultivating vines in the Aube since the late 18th century, actively participating in building the wine identity of this region that long remained out of the spotlight.

However, it is with Thibault Tassin and his wife Alizée that the estate takes a decisive turn. Wishing to break free from traditional models and offer a personal vision of champagne, the couple decides to create their own project. They acquire just over one hectare of vines in Celles-sur-Ource, an emblematic village of the Côte des Bar, and renovate an old farmhouse to install their cellar and vinification facility.

This new generation embraces an artisanal approach, based on observation, patience and understanding of living things. Their ambition is clear: to produce terroir champagnes, distinctive and coherent, capable of rivaling great Champagne houses while maintaining a human and committed approach. The conversion to environmentally respectful viticulture quickly becomes an obvious choice, marking a structuring stage in the history of the Tassin estate.

Terroirs and Vineyards of Champagne Tassin

The style of Champagne Tassin finds its source in the remarkable terroirs of the Côte des Bar, characterized by clay-limestone soils from the Jurassic period, similar to those found in Burgundy. This geological singularity gives the wines a pronounced vinous dimension, beautiful fruit ripeness and an ideal structure for crafting distinctive champagnes.

Pinot Noir, the dominant grape variety of the Tassin estate, expresses itself here with intensity, offering depth, texture and aromatic complexity. Chardonnay, present as a complement, brings freshness, tension and precision, perfectly balancing the whole. The more southern climate of the Aube, slightly warmer than in northern Champagne, allows optimal ripeness of the grapes while maintaining the acidity essential to the balance of sparkling wines.

In the vineyards, Alizée and Thibault Tassin favor viticulture that respects the soil and living things. Plant cover is encouraged, mechanical interventions are considered and treatments limited to what is strictly necessary. This approach, close to organic and natural wine principles, aims to preserve biodiversity and strengthen the expression of terroir in each harvested grape.

Vinifications at Champagne Tassin

Vinification at Champagne Tassin is intended as a natural extension of the work carried out in the vineyard. In their artisanal cellar, the winemakers favor minimal intervention practices, allowing the grape and terroir to express themselves with the greatest possible freedom.

Fermentations are carried out using indigenous yeasts, without resorting to selected yeasts, in order to preserve the aromatic identity of the grapes. The base wines are vinified with precision, mainly in stainless steel tanks to maintain freshness and purity of fruit, but also in old barrels for certain cuvées, bringing complexity and depth without excessively marking the wine.

Aging on lees is extended, promoting a delicate texture and fine mousse. The Tassin estate opts for low dosages, or even none for certain Brut Nature cuvées, in order to reveal the mineral structure and natural tension of the wines. This philosophy gives birth to straight, elegant and persistent champagnes, highly sought after by wine lovers and collectors attentive to aging potential.
