The André Beaufort estate is located in Ambonnay, one of the 17 villages classified as Grand Cru in the Champagne region. André Beaufort, who took over from his father in 2007, has a vineyard of 6.5 hectares of vines in Ambonnay (classified Grand Cru) on the Montagne de Reims, as well as in Polisy in the Aube. Champagne André Beaufort remains a pioneer in ecology and organic viticulture, as his father Jacques Beaufort began working in organic farming as early as 1971, following an allergy to synthetic products.

The TOP winemakers of Champagne Winemaker

The André Beaufort estate does not use chemical fertilizers. These are replaced by a vegetable compost, made on-site, supplemented with butcher's bone meal and blood flour. The André Beaufort estate goes beyond the rules of agrobiology. For more than 30 years, the estate has been experimenting with essential oils, which limit the development of parasitic fungi, and homeopathy, of biodynamic inspiration. The harvest is carried out manually once the grapes have reached their optimal level of ripeness. The wines are aged for around ten months in old barrels before bottling and the second fermentation, which gives them great richness on the palate. Vinification is carried out using indigenous yeasts. The Champagnes from the André Beaufort estate impress with their fruitiness, concentration and velvety texture. The disgorgement date is printed on each bottle. Among the cuvées offered by the André Beaufort estate, the blanc de blancs Champagne Grand Cru Ambonnay is structured, full-bodied and highly aromatic. Its chalky soil allows a very free expression of the grape varieties on this terroir Champagne, hence the power of Pinot Noir (80%), complemented by the finesse of Chardonnay (20%). Of fine expression, very powerful on the palate and with great length, the Grand Cru Ambonnay could be compared to a meditation Champagne. The Polisy cuvée, whose vines are located on the Côte des Bars, 40 km south-east of Troyes, has terroirs under the influence of the Langres plateau, with cold and humid air currents flowing through the small valleys of the vineyard. Furthermore, the terroirs of Polisy lie on clay soil, making soil work somewhat more difficult. Historically, the terroirs of Polisy were under Burgundian influence, resulting in a Champagne more oriented towards tension and finesse, with a sustained acidity. Elegant, harmonious and with beautiful length on the palate, André Beaufort's Champagne "Polisy" pairs wonderfully with aperitifs and fish. It should be noted that the best vintages overall for the Champagne appellation since the 1980s have been: 1982, 1985, 1989, 1990, 1996, 2002, 2004, 2005, 2008, 2012, 2015 and 2018.
