The Hermitage Le Pavillon 1997, a Syrah cuvée from the northern Rhône, comes from century-old vines on granite soil. Its nose evokes blackcurrant, liquorice and smokiness, while its powerful and silky palate lingers on the finish. To be savoured until 2035, with game or aged cheeses.
A family estate since 1808, M. Chapoutier embodies the standards of great wines from the northern Rhône, where every plot tells the story of an exceptional terroir.
- Terroir : Les Bessards, the emblematic plot of the Hermitage appellation, where steep granite soils shape Syrahs of rare depth.
- Vinification : Absolute respect for the fruit – manual harvesting, long maceration and ageing in oak barrels to reveal the purity of the grape variety.
Tasting notes for M. Chapoutier Hermitage Le Pavillon 1997
- To the eye : A deep garnet robe with purple reflections, dense and silky, betraying a generous substance and a long ageing capacity.
- On the nose : First, fresh aromas of blackberry and blackcurrant, then deeper notes of liquorice, tar and tobacco, lifted by a mineral hint of graphite and a saline touch.
- On the palate : A broad and fleshy attack, carried by velvety tannins and a lively acidity that brings tension and elegance; the finish, of remarkable length, lingers on notes of cocoa, candied dark fruits and a chalky minerality.
Serve at 16-18°C in a Burgundy glass to release its full complexity.
Vintage 1997
A vintage of ripeness and concentration, where the Syrah reached a rare fullness on the granite slopes of the Hermitage.
- Ageing potential : To be cellared for 30 to 60 years in a cool, humid cellar away from vibrations, to allow time to sublime its structure.
