From the Kimmeridgian slopes of Chablis, the Chablis 1er Cru Butteaux Vieilles Vignes 2023 from Domaine Louis Michel & Fils reveals aromas of lemon and green apple, carried by a chalky minerality. Aged in stainless steel, it combines silkiness and lively tension. To enjoy with oysters or fish through 2030.
A family estate rooted at the heart of Chablis, where tradition meets an unrelenting quest for purity.
- Terroir: Kimmeridgian soils of Butteaux, bearing a unique chalky minerality, shaping Chardonnays of rare precision.
- Winemaking: Fermentation in stainless steel tanks, without oak, to preserve the tension and the directness of the fruit.
To the eye: Pale golden robe, with a silky clarity, enlivened by a slight green glint.
On the nose: Aromas of candied lemon, Williams pear, crunchy green apple, followed by a floral touch and a saline minerality reminiscent of wet chalk.
On the palate: Dense and vibrant texture, driven by a taut acidity, a chalky salinity and a long finish, where ripe fruit and persistent freshness intertwine.
Serve between 12 and 14°C in a white Burgundy wine glass to reveal all its complexity.
