At the heart of the Côte des Blancs, Champagne Mathieu Deshautels embodies a new generation of passionate Champenois winemakers, determined to reveal the full purity of their terroir. Established in Le Mesnil-sur-Oger and Cramant, two villages classified as Grands Crus among the most prestigious in Champagne, this young, confidential estate is fully committed to organic farming and biodynamics. Mathieu Deshautels crafts rare cuvées, with no added sulphur, which express with finesse the mineral and chalky character of Champagne's soils.
The story of Champagne Mathieu Deshautels is one of a return to roots, nourished by a remarkable international journey. Born into a family of winemakers deeply rooted in Le Mesnil-sur-Oger and Cramant, Mathieu Deshautels chose to forge his own path before returning to take over the family parcels. After studying oenology in Beaune, he accumulated experiences around the world — in Burgundy alongside Claire Naudin, in the Jura at Marin Fumey, and also in South Africa, Greece and Australia where he notably worked at the By Farr domaine. These travels profoundly shaped his vision of wine and reinforced his conviction that a great Champagne is born above all from a living and respectful viticulture.
Back in Champagne, Mathieu settled in Le Mesnil-sur-Oger, transformed inherited practices and set up his cellars in Aÿ, in the Vallée de la Marne. He converted the domaine to organic and biodynamic farming, extended lees ageing and banned added sulfites. Alongside his work as a winemaker, he passes on his passion by teaching viticulture and oenology in Reims, in a pedagogical approach that extends his commitment to a sincere, resolutely forward-looking grower Champagne.
The domaine draws its singularity from two emblematic terroirs of the Côte des Blancs — Le Mesnil-sur-Oger and Cramant — both classified as Grands Crus in the échelle des crus of Champagne. These villages rest on a layer of pure chalk of exceptional quality, which gives the wines their legendary mineral tension, their fine bubbles and their extraordinary ageing potential. This chalk, both draining and capable of returning moisture to the roots during dry summers, acts as a true thermal and water regulator, essential to the ideal ripening of Chardonnay.
The vines of Champagne Mathieu Deshautels are farmed using organic and biodynamic agriculture, with no synthetic chemical inputs. Soil work is prioritised, ground cover is carefully managed and biodiversity is encouraged to promote intense microbial life. The vines, sometimes old, are pruned with care and yields are deliberately kept low in order to obtain grapes of remarkable aromatic concentration. Chardonnay, the king grape of the Côte des Blancs, occupies almost all of the parcels and finds here every condition to express the quintessence of Blanc de Blancs grand cru.
The winemaking at Champagne Mathieu Deshautels reflects a philosophy of minimal intervention, inherited from his years spent alongside natural winemakers in Burgundy and the Jura. The harvest is picked by hand at perfect ripeness, gently pressed and then brought to the cellars in Aÿ, where the juices are vinified in oak barrels. Alcoholic fermentation takes place with indigenous yeasts, without the addition of sulfites, in a spirit of absolute fidelity to the fruit and the place.
The wines then rest for several months on their fine lees — generally eleven months for the first cuvées — in order to gain texture, aromatic complexity and natural stability. No fining, no aggressive filtration is applied to alter the material. The second fermentation takes place in the bottle according to the traditional méthode champenoise, followed by a long ageing on laths that refines the bubbles and reveals the mineral depth of the Chardonnay. Disgorgement is carried out with no dosage or an extremely low dosage, giving the cuvées a sharp, straight Brut Nature character of crystalline purity.
Premier Voyage: a true manifesto of the domaine, this inaugural cuvée is a Blanc de Blancs grand cru made from 100% Chardonnay sourced from the family parcels of Le Mesnil-sur-Oger and Cramant. Vinified in oak barrels for eleven months, with no added sulfites and disgorged as Brut Nature, this Champagne stands out for its chalky tension, notes of ripe citrus, white flowers and fine pastry, extended by a saline finish of great length. Produced in only 997 bottles, this rare cuvée embodies the first chapter of a promising winemaking adventure and already counts among the references of lovers of grower Champagne, combining purity, energy and faithfulness to the grand cru terroir of the Côte des Blancs.
