The Raveneau estate owns plots in three Grands Crus: Blanchot, Les Clos and Valmur. The estate covers just under 10 hectares spread across these three Grands Crus and five Premiers Crus. These Grand Cru cuvées represent the pinnacle of the estate's production and are among the most sought-after in the entire Chablis appellation.

The harvest is carried out entirely by hand, which is rare in Chablis. After pressing, fermentation is conducted with indigenous yeasts in stainless steel tanks. The wines are then aged in feuillettes, the traditional 132-litre Chablis barrels, averaging seven to eight years old, for 12 to 15 months. The absence of new wood preserves the mineral purity characteristic of the wines from Domaine Raveneau.

The wines from Domaine Raveneau display aromas of white-fleshed fruits, mineral notes, and a vibrant acidity that lends them great freshness. These characteristics make them ideal partners for oysters and seafood, noble fish such as turbot or sea bass, as well as shellfish. The Grand Cru cuvées, more opulent in style, also pair beautifully with blue-veined cheeses or poultry in creamy sauces. 

The Raveneau estate produces several reference Premier Crus: Montée de Tonnerre, Les Vaillons, Butteaux, Chapelot, Mont-Mains and Forêt. Among them, the Montée de Tonnerre, from the same south-facing slope as the Grands Crus, is often cited as one of the finest wines of Chablis, almost on a par with the Grands Crus themselves.

The wines from Domaine Raveneau are renowned for their ability to age for many years, and their exceptional quality makes them true treasures among the white wines of Chablis. The feuillettes and ageing on lees give the wines a creamy texture and a remarkable bouquet that fully express themselves at maturity. Depending on the level (Premier or Grand Cru), cellaring for 10 to 20 years is often recommended to reveal their full potential.

The rise of Domaine Raveneau to international fame is closely linked to the renowned importer Kermit Lynch, who tasted a Chablis Raveneau at Taillevent and propelled it to the top of his sales in the United States. Previously, although the wines enjoyed excellent reviews in France, the domaine was not known abroad — this changed in the 1980s when the wines were exported to the United States for the first time.

History of Domaine Raveneau

The history of Domaine Raveneau is rooted in a turbulent period for Chablis, a wine-growing region of Burgundy marked by decades of challenges. It was in 1948 that François Raveneau, heir to a family of Chablis winegrowers, married Andrée Dauvissat, from another prestigious lineage of the region. This marriage was not only a union of love, but also a strategic alliance bringing together the viticultural heritage of two great families. At a time when Chablis was struggling to recover from the ravages of phylloxera, two world wars and harsh winters, François Raveneau showed remarkable vision. While his father, Louis Raveneau, chose to sell his plots to cope with the economic hardships of the 1950s, François decided to invest in the future.

In the 1960s and 1970s, taking advantage of falling land prices, François acquired exceptional vineyards, particularly in the Grands Crus de Chablis, such as Les Clos, Blanchot and Valmur. These strategic acquisitions laid the foundations of an estate that would rapidly become a benchmark. Unlike the majority of winegrowers of the time, who delivered their grapes to négociants or practiced mixed farming, François made the bold decision to devote himself exclusively to viticulture and to bottle his own wines — a pioneering approach that allowed him to control every stage of production and guarantee irreproachable quality.

François Raveneau's style, characterized by a pursuit of optimal grape ripeness, controlled yields and barrel aging, quickly won over discerning enthusiasts. But it was in the 1970s that the estate achieved true international recognition. During a tasting at the prestigious Taillevent restaurant in Paris, American importer Kermit Lynch discovered a 1976 Montée de Tonnerre that moved him deeply. Impressed by the wine's finesse and depth, he set about convincing François to export his cuvées to the United States. The latter, initially reluctant for fear that his wines would not withstand the journey, eventually relented after several years of insistence. The 1979 vintage marked the arrival of the first Les Clos on the American market, and the success was immediate. Raveneau then joined the ranks of the greats, becoming an icon among Chablis producers.

In 1995, François retired, handing over the reins of the estate to his two sons, Jean-Marie and Bernard. Jean-Marie, a graduate of the Lycée Viticole de Beaune, had been working alongside his father since 1978, bringing technical rigor and an intimate knowledge of the vines. Bernard, for his part, followed a more winding path: after an experience in Burgundian négociant trade, he ultimately rejoined the family estate at the call of the terroir and his father's legacy. Together, the two brothers formed a complementary team, sharing tasks between the vineyards and the cellar with a humility and pragmatism more reminiscent of farmers of old than the artists they nonetheless are.

Today, the new generation is taking over with equal passion. Isabelle, Bernard's daughter, and Maxime, Jean-Marie's son, joined the estate in 2010 and 2017 respectively. Their arrival marks a slight evolution in the style of the wines, which have gained in precision and suppleness through innovations such as a more spacious cellar allowing for fewer wine manipulations, or a reduction in SO2 doses. Despite these adjustments, the spirit of Domaine Raveneau remains unchanged: to produce exceptional Chablis, true to their terroir and capable of enduring through the decades.

Terroirs and Vines of Domaine Raveneau

Domaine Raveneau farms approximately 10 hectares of vines, a heritage carefully assembled by François in the 1960s and 1970s, and lovingly maintained by his successors. These vineyards, situated on the typical Kimmeridgian clay-limestone soils of Chablis, offer a diversity of terroirs that gives each cuvée a unique personality. The estate holds plots in three emblematic Grands Crus as well as in six prestigious 1er Cru. Added to these are a Chablis Village cuvée and a Petit Chablis, introduced in 2014.

The vines, often old (some planted as far back as the 1930s), are tended according to a respectful and reasoned philosophy. Ploughing, bud removal, careful trellising and green work are carried out with extreme care to ensure optimal quality grapes. Harvesting, exclusively manual, preserves the integrity of the bunches and ensures rigorous selection. The estate takes care to limit yields in order to promote aromatic concentration and achieve a perfect balance between ripeness and acidity, the hallmark of great Chablis.

Each terroir expresses its own personality: Les Clos, with a full southern exposure, produces powerful and complex wines; Valmur, on a steep slope, offers elegant finesse; Blanchot, at the top of the slope, reveals an intense aromatic profile. Among the Premiers Crus, Montée de Tonnerre, often compared to a Grand Cru, shines for its minerality and length on the palate, while Butteaux, on clayey soils, produces deep and serious wines. This diversity of terroirs, combined with meticulous work in the vineyards, allows Domaine Raveneau to offer a range of rare richness and precision.

Vinifications at Domaine Raveneau

Vinification at Domaine Raveneau is a model of authenticity and minimalism, where every gesture is carefully considered to respect the fruit and allow the terroir to express itself. After manual harvesting, the grapes are immediately pressed to preserve their freshness. The juice obtained is settled for half a day to eliminate impurities while retaining the fine lees, which will bring richness and complexity to the wine. Alcoholic fermentations take place spontaneously in stainless steel tanks with indigenous yeasts, a method that guarantees the authenticity of the aromas and avoids any standardization.

Once fermentation is complete, the wines are transferred to used barrels for aging over 10 to 15 months. Domaine Raveneau favors feuillettes, those small traditional Chablis barrels with a capacity of 132 liters, often 7 to 8 years old. Unlike new barrels, these casks impart no pronounced woody flavors, but allow for a subtle micro-oxygenation that softens the wines' natural acidity and develops their creamy texture. During this aging period, only the fine lees are retained, adding an additional dimension of richness and complexity.

After this period in wood, the wines generally spend an additional 3 to 6 months in stainless steel tanks to stabilize their structure and refine their aromas before bottling. The estate often chooses to delay the release of its cuvées by a few months, allowing the wines to harmonize further before reaching the market. This artisanal approach, inherited from François Raveneau and perfected by his sons and grandchildren, guarantees Chablis of rare purity and elegance, capable of improving over 15 to 20 years, or even longer for the Grands Crus. The wines of Domaine Raveneau are also distinguished by their ability to reveal additional layers of flavor after a long period of aging, moving from a youthful austerity to an extraordinary richness and complexity.

The cuvées of Domaine Raveneau

Chablis Grand Cru Les Clos

Sourced from a 0.5-hectare plot with a full southern exposure at mid-slope, Les Clos is planted in several stages between 1963 and 1989. This Grand Cru, probably the most celebrated in Chablis, is a wine of extraordinary complexity and balance. Reserved and closed in its youth, it requires patience to reveal its full depth, then offering intense mineral notes, a silky texture and an endless finish. Its aging potential is exceptional, often estimated at several decades.

Chablis Grand Cru Blanchot

With 0.67 hectares of vines, one third of which was planted in 1935 and the rest in 1970, Blanchot benefits from a very sunny position at the top of the slope. This Grand Cru stands out for its power and rich aromatic profile, while retaining the salinity and minerality characteristic of Chablis. Sourced from very old vines, it offers rare intensity and an impressive aging potential, ideal for lovers of evolved wines.

Chablis Grand Cru Valmur

On a 0.75-hectare plot planted in the late 1960s, Valmur is situated on a steep slope to the left of the valley, making it one of the most demanding to work. But the effort is worthwhile: this Grand Cru produces wines of remarkable finesse and elegance, often described as "lacework" by tasters. Reserved in its youth, it reveals itself after a long period of aging, offering subtle aromas and a refined texture.

Chablis Premier Cru Montée de Tonnerre

Montée de Tonnerre is the largest plot in the estate at 3.12 hectares, located on the right bank of the Serein, right next to the Grands Crus. Planted between the 1950s and 1990s, it covers the lieux-dits Chapelot and Pied d'Aloup. This Premier Cru is often considered the equal of a Grand Cru, so impressive is its complexity, power and minerality. Balanced and persistent, it is capable of aging admirably for 10 to 20 years.

Chablis Premier Cru Chapelot

Sourced from a parcel selection of old vines on 1.1 hectares in the lieu-dit of Montée de Tonnerre, Chapelot stands out for its refinement and elegance. More delicate than its counterpart Montée de Tonnerre, it is nonetheless complex and long on the palate, with an equally impressive aging potential. A rare cuvée, highly prized by connoisseurs.

Chablis Premier Cru Vaillons

On 0.49 hectares planted in the late 1970s, Vaillons benefits from a sunny mid-slope exposure. This Premier Cru is always very aromatic, blending floral and fruity notes with a saline minerality typical of Chablis. Its freshness and balance make it an accessible wine from its youth, while being capable of evolving well over time.

Chablis Premier Cru Butteaux

Butteaux, a lieu-dit of Montmains, extends over 1.5 hectares in a cooler, windier climate, on very clayey soils. Planted between the 1950s and 1980, the vines produce serious, deep and mineral wines. Austere in their youth, they reveal themselves after several years of aging, offering a richness and texture that captivate lovers of evolved Chablis.

Chablis Premier Cru Montmains

On 0.36 hectares planted in the early 1990s, Montmains is situated on a mid-slope terrace. This Premier Cru yields deep, floral and delicate wines with beautiful aromatic intensity. Its finesse and balance make it an ideal cuvée for discovering the diversity of Raveneau's terroirs.

Chablis Premier Cru Forêt

Forêt, another lieu-dit of Montmains, covers 0.67 hectares at the bottom of the slope, on soils less clayey than Butteaux. Planted between the 1990s and 2000, the vines produce tender, floral and elegant wines with a silky texture and pronounced freshness. A cuvée that combines approachability and finesse.

Chablis Village

Sourced from 1.11 hectares spread across two plots planted in the 1980s and 2000s, this Chablis Village is a pleasant and approachable wine. Located on the reverse slope of Montmains and in the valley facing Forêt, these vines yield fruity, approachable and slightly mineral wines, perfect for immediate drinking or moderate cellaring.

Petit Chablis

Since 2014, the estate has produced a Petit Chablis from 0.82 hectares planted in 2010 on the plateau above the Vaudésirs, on Portlandian limestone soil. This "new baby" of the estate is a mineral, fruity and approachable wine, ideal for discovering the entry-level offering of Raveneau while appreciating the elegant signature of the house.

Domaine Raveneau is not the only estate to shine in the Chablis appellation, where several exceptional producers share a common pursuit of excellence. Domaine Jean-Paul Droin, with its centuries of history, excels in precise and well-balanced Chablis, often marked by a beautiful mineral tension. Domaine de l'Enclos, a more recent estate, captivates with its organic approach and vibrant wines that faithfully reflect the Chablis terroir. Patrick Piuze, for his part, has established himself as a master of parcel-by-parcel vinification, offering cuvées of remarkable purity and intensity. Pattes Loup, under the direction of Thomas Pico, stands out for its biodynamic methods and its Chablis of rare finesse, often highly sought after by natural wine enthusiasts.
