The Chablis 1er Cru Vaillons 2006 from Domaine François Raveneau is born on the chalky soils of Chablis. This Chardonnay, fermented in barrels, offers aromas of peach and chalk. Fresh palate, silky texture, mineral finish. To be cellared for 10 years or more, ideal with fish or shellfish.
A pillar of Chablis excellence, this family estate has embodied, for three generations, the alliance between an exceptional terroir and vinification of rare precision.
- Terroir : The hillsides of Chablis, with Kimmeridgian soils rich in marine fossils, impart to the wines their mineral signature and saline tension.
- Vinification : Fermentation in barrels and ageing in feuillettes, for a pure expression of Chardonnay, without artifice.
Tasting notes for the wine Domaine François Raveneau Chablis 1er Cru Vaillons 2006
- To the eye : Golden robe with green highlights, of crystalline clarity and silky texture, like a veil of silk over stone.
- On the nose : First notes of white peach and tart cherry, followed by a hint of toasted pistachio, before opening onto a chalky minerality and a subtle iodine-tinged salinity.
- On the palate : A lively and precise attack, carried by a taut acidity that stretches into a full and fleshy palate, where chalk and iodine mingle to a long, chiselled finish of mineral elegance.
Serve at 11°C in a white Burgundy glass to release the full complexity of this great Chablis.
Vintage 2006
A generous vintage, where the ripeness of the fruit is balanced with a vibrant minerality, typical of great Chablis.
- Ageing potential : To be stored until 2026 or beyond, in a cool cellar (12–14°C) and away from light.
