Natural Champagnes in the heart of the Vallée de la Marne
Champagnes Nowack embody the history, innovation and excellence of the Vallée de la Marne. Founded in 1795, this family house distinguishes itself through its environmentally respectful viticulture methods and its unique plot-by-plot approach. Today led by Flavien Nowack, the estate blends tradition and modernity to produce singular Champagnes, marked by finesse and purity.
The history of Champagne Nowack begins in 1795, when Jean-Baptiste Nowack, originally from Bohemia, settled in Vandières, in the Marne Valley. In its early days, the Nowack family was dedicated to the production of roof tiles, before planting its first vines in the mid-19th century. This transition marks the starting point of a winemaking tradition that has been passed down through six generations.
Ferdinand Nowack, the third generation, played a key role in the history of the estate. After the devastation of phylloxera, he rebuilt the vineyard with determination, becoming an indispensable figure in the region. His son Fernand carried on this passion and won prestigious prizes, notably at the Concours Général Agricole in Paris in 1935 and 1936, for his 100% Pinot Meunier nature wine.
Today, the story continues with Flavien and Frédéric Nowack, who manage the estate together. In 2011, Flavien took the reins and initiated a transition towards organic viticulture and natural winemaking, marking a decisive turning point for the house.
Champagne Nowack extends over 7 hectares, mainly located in Vandières, in the Marne Valley. This terroir is recognised for its geological diversity, comprising clay-limestone soils, fossiliferous marls and sandstone. This richness allows the emblematic grape varieties of Champagne — Pinot Meunier, Chardonnay and Pinot Noir — to fully express their potential.
A nature-respectful approach
Since 2011, the estate has begun a transition to organic farming, excluding the use of herbicides and favouring sustainable methods. Flavien Nowack considers the vine as a complete ecosystem in its own right. Each year, trees and hedgerows are planted to enrich biodiversity and strengthen the soils. This meticulous work guarantees grapes of exceptional quality, ripe and full of mineral energy.
Focus on single-vineyard plots
Flavien Nowack adopts a meticulous single-vineyard approach, isolating terroirs to highlight their singularity. Plots such as La Fontinette, La Tuilerie and Les Bauchets reflect this philosophy. Each wine is an ode to terroir, revealing the richness of the Marne Valley.
In the cellar, Flavien favours natural and non-interventionist winemaking methods. The grapes, harvested at full maturity, are gently pressed using a Coquard vertical press. The musts ferment with indigenous yeasts, without chaptalization or filtration, guaranteeing a pure expression of fruit and terroir.
A natural second fermentation
The second fermentation in bottle (prise de mousse) is carried out using unfermented grape must, which produces gentle and elegant bubbles. The wines are aged on lees for an extended period, between 18 and 40 months, and disgorged under cork. This approach yields a fine effervescence and a silky texture.
Minimal dosage
Dosage levels are kept between zero and 4 grams per litre, often achieved using grape must. This practice preserves freshness and highlights the purity of the Champagne Nowack wines.
