Nestled in Beaunay, at the heart of the Coteaux du Petit Morin south of Épernay, Champagne Oudiette x Filles embodies the elegance of a feminine, sincere viticulture deeply rooted in its terroir. Led by Margot Laurent and her sister Charlotte, the third generation of winegrowers, accompanied by their mother Florence, this intimate 2.5-hectare estate celebrates the legacy of their grandmother Arlette and the richness of a family of women passionate about Champagne. Managed under sustainable viticulture practices and certified Haute Valeur Environnementale level 3, the vineyard unfolds across nine carefully cultivated plots on the chalky, clay and silty soils of Beaunay and Celles-lès-Condé. The cuvées, micro-vinified in Burgundian oak barrels, without chaptalization, fining or filtration, express the purest character of Chardonnay and Pinot Noir.
The story of Champagne Oudiette x Filles is one of a heritage passed down from woman to woman, across three generations. It all begins with Arlette, a pioneering grandmother whose resilience and passion laid the foundations of a modest family estate in Beaunay, in the Vallée du Petit Morin. Florence, her daughter, continued this adventure before her own daughters, Margot and Charlotte, joined the estate in 2014 to take it to a new dimension. That same year, Charlotte opened the bed and breakfast La Poterne in Épernay, marking the first step of the family project towards wine tourism.
In 2015, after several years of study, Margot Laurent took over the 2.5 hectares of vineyards spread across Beaunay and Celles-lès-Condé. The two sisters launched the Sensations Vigneronnes in 2016, an oenogastronomic experience at the estate, then in 2017 began their very first vinifications on fifty ares dedicated to the project. Four years later, UniTerre was born, the first cuvée signed Oudiette x Filles, followed in 2021 by the cuvée Composition. In just a few vintages, Margot has established herself as one of the most singular winemakers of her generation, celebrated for the artisanal precision and radical transparency of her work.
The vineyard of Champagne Oudiette x Filles extends over 2.5 hectares divided into nine distinct plots, planted mainly with Chardonnay and Pinot Noir, complemented by a few plots of Pinot Meunier in the Vallée de la Marne. The heart of the estate is located in Beaunay, a village in the Val du Petit Morin, in the southern part of the Côte des Blancs, where the hillside curves to form elegant promontories and cirques that offer the plots privileged south, south-east and south-west exposures.
The soils blend silts at the foot of the slope, clays in the middle of the slope, beneath a framework of chalk and clayey sands, creating a geological mosaic of great aromatic diversity. Each plot — whether Les Bas Vigny, Les Gourdaines or Les Sablonnières — has its own personality and benefits from tailor-made cultivation. Margot tends the vines intuitively, by hand, without insecticides or herbicides, favouring ploughing, controlled natural grassing and adapted cover crops. The estate holds Haute Valeur Environnementale level 3 certification and is gradually moving towards organic certification.
In the winery, the Oudiette x Filles philosophy rests on a deliberate non-interventionist approach and a deep respect for the vintage. Manual harvesting, rapid transport to the latest-generation Coquard inclined-plate press located five minutes from the vineyards, rigorous selection of only the cœur de cuvée from the first pressing to retain only the noblest fraction of the juice — every gesture is designed to preserve the purity of the grape. Margot vinifies her still wines at the Coopérative Vinicole la Grappe d'Or in Vert-Toulon, which allows her plot-by-plot micro-vinification with modern equipment, in a cooperative spirit unique in Champagne.
The alcoholic fermentation takes place in 228-litre Burgundy barrels, without fining, without filtration and without cold stabilization. Malolactic fermentation is spontaneous, and the ageing extends for ten months in oak barrels, with a very limited proportion of new wood. Chaptalization is excluded, as Margot prefers to wait for optimal ripeness of the grapes before harvest. After the second fermentation, the wines rest for a minimum of thirty-six months in bottle before disgorgement at a very low dosage (extra brut). Each cuvée thus bears witness to the vintage, the place and the year, without any predetermined formula, like a bespoke garment tailored to reveal its terroir.
UniTerre: the estate's first cuvée and a symbolic expression of the work of three generations of winemakers, UniTerre is an extra brut Blanc de Blancs 100% Chardonnay sourced from three plots of over thirty-five years of age in Beaunay, on the Coteaux du Petit Morin (Les Bas Vigny and Les Gourdaines in particular). Vinified half in barrel and half in stainless steel tank for the first vintages, then aged entirely in oak barrels for ten months, followed by a long rest of thirty-six months in the cellar, this cuvée is best enjoyed at 10–12°C, benefits from a gentle decanting and offers a chiselled, mineral and deeply aromatic expression of Chardonnay from Beaunay. The very restrained dosage (around 2 g/l) underlines the finesse, salinity and tension of the terroir. Several vintages have followed one another (UniTerre I, II, III), each faithfully reflecting the character of its year, true to the idea that every harvest deserves its own reading.
Composition: the estate's second cuvée, born from the 2021 vintage, Composition is an extra brut assemblage champagne comprising 50% Chardonnay and 50% Pinot Noir, sourced from the finest plots in Beaunay (Les Bas Vigny, Les Gourdaines and Les Sablonnières), where the vines exceed thirty-five years of age. Vinified entirely in oak barrels (of which 10% new wood) for ten months, followed by seventeen months of ageing in the cellar, it benefits from spontaneous malolactic fermentation and is unfiltered. The result reveals a vibrant nose of violet, honey, white flowers and yellow fruits, extended by a fresh, energetic palate with precise minerality. A singular witness to a demanding vintage, Composition illustrates all of Margot Laurent's mastery: extracting the quintessence of a singular year without ever erasing its identity, for an author's champagne that is at once open, crisp and built for ageing.
