- Terroir : Grand Cru vineyards of Bouzy, on brown chalky and limestone soils, shaping champagnes of vibrant minerality and rare elegance.
- Winemaking : Natural methods – indigenous yeasts, aging in used barrels, without dosage or sulfur – for cuvées of remarkable purity and tension.
Tasting notes for Benoît Lahaye Violaine Brut Nature 2021
On the eye – A pale gold robe with green highlights, of crystalline clarity, crossed by a fine and persistent effervescence, like a veil of silk.
On the nose – First notes of candied citrus (cedrat, pink grapefruit), followed by a touch of acacia blossom and toasted bread, before ending on a subtle iodized salinity, the signature of great chalky terroirs.
On the palate – A silky and taut texture, carried by a lively and precise acidity, where aromas of ripe white fruits, a hint of roasted hazelnut and a chalky minerality mingle, extending the finish into a long saline persistence.
Serve between 8 and 10°C, in a narrow flute or a tulip champagne glass to preserve its freshness and complexity.
